Dalina, we are so thrilled to be connecting again and can’t wait to hear about all the amazing things you have been up to. Before we jump into all of that, some of our readers might have missed our prior interview, so can you take a moment to reintroduce yourself?
Thank you for having me back! My name is Dalina Soto, and I’m a Registered Dietitian and founder of Your Latina Nutrition. My brand and work are deeply rooted in celebrating the beauty and diversity of Latine culture, especially when it comes to food and health. I focus on supporting Latinas in reclaiming their relationship with food through a weight-neutral, culturally inclusive approach that values health at every size (HAES) and intuitive eating principles.
What sets my work apart is the intersection of science-based nutrition and cultural pride—showing how traditional foods can be part of heart-healthy and diabetes-supportive lifestyles without subscribing to diet culture or compromising authenticity.
My journey to this point has been shaped by personal and professional experiences. I’ve seen how damaging diet culture and food stigma can be, especially for Latinas, and I wanted to create a space where people can embrace their culture, prioritize their health, and feel seen and supported. This mission inspired my upcoming book, The Latina Anti-Diet, which celebrates the richness of our cultural foods and offers a guide to authentic health and well-being.
It’s been an incredible journey of blending my love for community, culture, and nutrition into a business that I hope helps people thrive while staying true to their roots.
Awesome, so we reached out because we wanted to hear all about what you have been up to since we last connected.
First, my team has grown to 8 amazing dietitians, and we now accept insurance in 14 states. This expansion has been a huge step toward making culturally inclusive, weight-neutral nutrition care more accessible. One of the projects I’m most excited about is launching the Latina Nutrition Library, a membership platform priced at just $27/month. It includes 52 weeks of menus, each with recipes that not only celebrate our cultural foods but also include education on blood sugar control and heart health. The library is packed with articles and resources that make navigating nutrition feel approachable and empowering.
I’m also excited to share that my debut book, The Latina Anti-Diet, is coming out on March 18, 2025, and pre-orders are now available! I’m absolutely obsessed with the cover and can’t wait for it to be out in the world. One of my dreams is to go on a book tour, and I’m crossing my fingers it will happen!
On a personal level, I’ve grown so much as a CEO. I’ve worked hard to create a business where my dietitians are valued, paid fairly, and actively involved in decisions that shape our practice. It’s been an incredible learning experience to build a culture of collaboration and transparency. On the fun side, I’ve taken up pottery as a new hobby—it’s been a refreshing and creative outlet outside of work!
We’ve also been busy with some incredible community projects. One of my favorite initiatives was creating a menu highlighting the national dishes of all 33 countries in the Caribbean and Latin America. Each dish is paired with education on how it supports blood sugar management and heart health, showing how our cultural foods can be both delicious and nourishing.
Looking ahead, my goal is to expand our practice to even more states and continue providing education and resources that empower our community. It’s been such a rewarding journey, and I’m so excited for what’s to come.

What are you most excited about in the coming year?
I’m most excited about the release of my debut book, The Latina Anti-Diet: A Dietitian’s Guide to Authentic Health That Celebrates Culture and Full-Flavor Living, coming out on March 18, 2025! It’s been such a labor of love, and I can’t wait for it to be out in the world. The book dives deep into breaking down diet culture and showing how our traditional Latino foods are not just healthy but powerful in supporting heart health, blood sugar management, and overall well-being.
One thing I’m particularly proud of is how the book weaves together science, cultural pride, and actionable advice—something I felt was missing in the health and wellness space. It’s a celebration of food and culture that I hope will empower readers to embrace their health without losing the essence of who they are.
I’m also obsessed with the cover design—it perfectly captures the energy and intention behind the book. Beyond the release, I’m dreaming of going on a book tour, meeting readers, and having conversations about how we can reclaim health on our own terms. It’s an exciting time, and I’m grateful to share this journey with my community!
