Today we’d like to introduce you to Elodie Pouliquen.
Elodie, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
We were both born and raised in Paris. We lived in New York 15 years ago and ever since, we wanted to come back in the United States by bringing something new !!! And live a new experience. As a gourmet and epicurean, we combine science and art in all of our creations. Our mission is to reinvent traditional choux pastry recipes while introducing contemporary flavors. We truly redefine the Classic French Pastry. We use traditional recipes and add a new twist with unexpected ingredients and delicious flavors.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
During three months we visited all the different districts of Los Angeles to find the perfect place for our pastry shop. When we saw this shop, it was love at first sight, we immediately knew that it would be the one! It was a dream for us to be located on Melrose Avenue, it is a village and we love the diversity of our customers. We always follow our instincts and feel the energy around us to help us decide what is best. It was very ambitious of us to create a bakery shop in an old hairdresser salon, but it turned out great! It took us more than a year to open La Chouquette with the different permits and administration but it is so worth it. We are very proud to bring our creations in this district of LA, it was a challenge because Melrose is not the “chicest” place in LA but it was a good bet for us.
So let’s switch gears a bit and go into the La Chouquette story. Tell us more about the business.
We first became famous for our croissant.
We work with seasonal influences. We let seasons guide our creations.
La Chouquette Pastries are a delicate balance of technique, aesthetic and taste. Every flavor is a celebration of expression and passion of the choux pastry.
Don’t be surprised if you encounter exotic flavors like passion fruit or flowers like lavender and rose. Consciously healthy we don’t over sweet our pastries, all our Eclairs are Gluten Free.
All our pastries and croissants are made from scratch everyday like the artisanal way to make it!!! Our products are made with LOVE…
We do a lot of catering for events, corporate events, weddings, party and birthday.
We invent new ways to cater events with new and sophisticated creations of “Amuse Bouche”.
Has luck played a meaningful role in your life and business?
I prefer to use the term faith in destiny than luck. Luck doesn’t have a real role in our success, I believe that it is more hard work and determination that contributed to our success. We work very hard to have as much luck as possible on our side. I believe in the force of the universe, what goes around comes around. I’m not saying I am not lucky, I am, but I think that by putting a positive attitude and work out there, it brings us positive results and success from within.
