Meet Joshua Kopel of Preux & Proper in Downtown Los Angeles

Today we’d like to introduce you to Joshua Kopel.

Joshua Kopel is an American entrepreneur, restaurateur and environmental advocate. Born in Baton Rouge, Louisiana, the spawn of bootleggers and retail giants, he was bred for the hospitality industry. Throughout Kopel’s 20+ year career in food and beverage he has managed venues ranging from the Alligator Bayou Bar, located on Alligator Bayou Road, seated on Alligator Bayou (it was exactly how you’re picturing it in your mind) to the hottest Hollywood nightclubs, bars, and ultra-lounges (far less glamourous than you’re picturing it in your mind). Kopel went independent in 2010 opening his first concept Five0Four, a New Orleans-inspired bar, on the Walk of Fame in the heart of Hollywood. Four years later, his sophomore effort, Preux & Proper, opened cementing his role as an arbitrator of taste in all things Southern within the confines of the city of Los Angeles.

Kopel’s varied interests and talents have landed him several positions of influence ranging from being voted one of the Steamiest Southern Stars by E! Entertainment Television to the elected position of Business Chair on the Hollywood Hills West Neighborhood Council to founding and serving on the Board of Directors of the Friends of Runyon Canyon, a non-profit focused on the protection of local Los Angeles Park areas.

Preux & Proper – what should we know? What do you guys do best? What sets you apart from the competition?
Rooted in the delightfully bold flavors and techniques of the Creole and Cajun kitchen’s, we season our soul food with a good bit of Low country swag and So-Cal culture. Every dish we serve is a result of our entire kitchen working together as a family. Our scratch cookery focuses on thoughtfully sourced sustainable ingredients, modern culinary technique and puttin’ a whole lotta’ love into everything we do. Whether getting eats with us at our neighborhood barroom Preux or our more formal dining room Proper, we truly hope that you’ll dig our attention to detail when it comes to making food to satisfy your soul.

We strive to source our food and product from sustainable companies operated with love, care and integrity. Currently, we’re proudly sourcing from (and supporting) The Garden Of…, McGrath Family Farm, Peads & Barnetts, Weiser Family Farm, Dock to Dish, Rocky Canyon Farms, Sonoma County Poultry, Sunburst Trout Farms, Rancho Gordo, Anson Mills, Cypress Grove, Johnson County Country Hams, Mary’s Free Range Poultry, North Country Smokehouse, Strauss Free Raised Grass Fed Beef, Central Milling, Chino Valley Ranchers, Hudson Valley Foie Gras and many more.

What is “success” or “successful” for you?
Success is a good night’s sleep. It’s speaking to my parents every week on the phone and seeing my wife every night. It’s gauged by how many happy guests I serve on a weekly basis and how many employees look forward to coming to work everyday. Success is the journey, not the destination.
