

Today we’d like to introduce you to Fabienne and Frédéric Soulies.
Born to a family of bakers and wheat farmers in the southwest of France, Frédéric learned of his love for cooking at a young age. He graduated with honors from L’Ecole de Boulangerie Patisserie de Paris and went on to train under several talented bakers and pastry chefs in Paris and on the French Riviera. His wife, Fabienne, born and raised in Monaco, is well versed in the operations side of owning a business. She holds a degree in international management from the Institut Superieur de Gestion in Paris, and has an M.B.A. in international business from Golden Gate University in San Francisco.
In 2014, Frédéric and Fabienne, moved to Los Angeles with their three kids to pursue their longtime dream of opening an authentic French bakery in the United States, and in February 2015, Pitchoun! opened its doors in the heart of downtown.
Has it been a smooth road?
Creating a new business from scratch, especially in a foreign country, is never an easy road! Permits and health inspections are always tough. However, once you’ve opened, you forget all about the obstacles and are happy to see customers’ satisfaction and hear their sweet congratulatory words.

Pitchoun! provides Angelenos with the quintessential French dining experience. From house made pastries to delicious soups and salads, everything is prepared from scratch on site using family recipes in our state-of-the-art bakery and tastes just as it would in France. The bakery specializes in creating freshly baked, unique breads like the Matcha & Dried Apricot Bread and the Sourdough Coco Bread with Chocolate Chips. We can also create breads that are made into the shape of mustaches! Pitchoun!’s Raspberry croissant is also quiet special, as you’ll find 2 layers of dough rolled together, one red and one normal. The pastry team at Pitchoun! is full of amazing talent, and creates specialty fine pastries that can’t be found anywhere else in the city.
Pitchoun! also has a wonderful selection of French wines, available for customers to purchase by the glass or by bottle.
