Today we’d like to introduce you to Cody Beverstock.
Cody, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I grew up in the Pacific Northwest surrounded by a whole lot of food and food culture – cooking with my Mom, fishing the Puget Sound with my Dad and cooking meals with my Sister for our family. It’s many of these memories from childhood, along with observations of the beauty of life around me, that so heavily influences my cooking today.
After graduating from the San Diego Culinary Institute, I worked under a brilliant James Beard Award-nominated chef in San Diego and quickly jumped up the ranks. It was here that I really gained an appreciation for the importance of allowing the seasons to influence the ingredients that I use in order to capture them at the height of their flavor.
At 29 years old, I founded CB Cuisine, providing the very best in-home dining experience and prepared meals for busy individuals and families in Los Angeles with one goal in mind: to inspire, bring to life and create unforgettable experiences around the table for my clients. I work exclusively with seasonal ingredients and source meat only from purveyors that I trust and know treat their animals humanely, out of respect for the animals’ welfare.
When I was 19, I was diagnosed with clinical depression and went through what was by far the most challenging period of my life. Everything that I am today, all of my beliefs and my perspective on life, was born out of that time period of my life. It is for this reason that I formed the “Create Something Beautiful” campaign, which is a major focus of mine now as a chef and individual, and is all about utilizing the power of food and cooking to connect with and inspire people to create the lives they want. Because I believe that we all have greatness within us. We all have a purpose in life and it is our obligation to identify that purpose and pursue it with reckless abandon.
Has it been a smooth road?
Starting a new business always has its challenges, the biggest being that there just isn’t enough time in the day! I think the biggest challenge for any new business is obtaining your first clients and building brand awareness because the market in LA is so saturated, regardless of what industry you’re in, and it takes time to start to distinguish and separate yourself.
So let’s switch gears a bit and go into the CB Cuisine story. Tell us more about the business.
CB Cuisine is a personal chef service providing the very best in-home dining experience and prepared meals in Los Angeles. We specialize in dinner parties ranging from 2 to 20 people and in preparing custom-tailored, fresh and nutritious meals for individuals and families on a weekly basis. I work with only the freshest seasonal ingredients from the farmers market and local market, allowing the seasons to influence the ingredients I use to capture them at the height of their flavor.
I also only work with purveyors whom I trust and know treat their animals humanely, out of respect for the animals’ welfare. I think, honestly, the thing I am most proud of up to this point are the wonderful relationships I’ve had the opportunity to develop with fellow chefs and clients.
How do you think the industry will change over the next decade?
I think the vast majority of people are wanting to be able to eat healthy, nutritious meals that also taste incredibly delicious. We live in a much more health-conscious world than we did, say, 10 years ago, and I think the notion that healthy food has to taste like cardboard is starting to dissipate. This is a major reason I think the personal chef service is really expanding, because, as a trained chef, I am able to provide my clients with exactly that: healthy, nutritious meals that not only taste incredible, but also properly fuel your body. The other reason the personal chef industry is really expanding is that our clients save money and save time.
They no longer have to worry about meal prep, grocery shopping, cooking and cleaning, or about wasting money on groceries that go unused or restaurant food that is neither healthy nor often matches the amount spent.
