Hi Rebecca, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
My journey with Chingona Tacos officially began in 2021. After relocating to the High Desert, from Los Angeles , I knew I wanted to build something of my own, so I set out to open a taco catering business.

To be honest, “Pink Tacos” wasn’t originally the plan! On paper, I had a completely different vision for the brand. But as I started connecting with the local community and experimenting with my craft, I felt a pull toward something bolder and more unique. I decided to lean into the experience of our signature handmade pink tortillas, and the response was instant. People didn’t just want a taco; they wanted the vibrant, pink taco.

What started as a simple catering idea quickly grew into a movement. It hasn’t always been easy—transitioning to a new city and launching a business in the same year is a massive hustle—but staying authentic to that “handmade” quality is what kept us grounded.

Today, we aren’t just serving tacos; we’re building a community. Between our recent “Tortilla Masterclass” and collaborating with other local “Boss Babes,” I’ve been able to turn a 2021 relocation into a thriving brand that celebrates heritage with a modern, pink twist. I’m so proud of how far we’ve come by following the lead of our community and staying true to the grind.

The most exciting part of this growth? We’ve officially expanded our reach. While the High Desert is our new home, we are now proudly servicing the Los Angeles area as well. Bringing our pink tortillas back to my roots in LA feels like the perfect next chapter for Chingona Tacos, and I’m so proud to see how far this hustle has taken us.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Not at all. I think there’s a misconception that if a brand looks vibrant and successful, it was easy to build. In reality, I have learned so much since 2021, and honestly, I’m still learning every single day.

When I first had the vision for Chingona Tacos, I’ll let you in on a secret: I didn’t even know how to make handmade tortillas yet. I had the heart and the hustle, but I had to teach myself the actual craft from the ground up. Mastering the masa, getting the press right, and perfecting that signature pink glow was a steep learning curve that happened behind the scenes while I was simultaneously figuring out how to be a “business owner.”

The biggest struggle, hands down, has been the balancing act. I’m not just a CEO; I’m a mom. Learning to run a professional catering operation while showing up for my son meant late nights, early mornings, and a lot of trial and error.

Thanks – so what else should our readers know about your work and what you’re currently focused on?
We are proud SoCal taco caterer specializing in authentic Mexican cuisine. While we offer a full menu, we are famous for our vibrant pink tortillas. What sets us apart is that “Chingona” spirit—blending traditional flavors with a modern, high-energy aesthetic. Our tortillas is our craft.

If you had to, what characteristic of yours would you give the most credit to?
Because I started this journey without even knowing how to make a handmade tortilla, my eagerness was my greatest asset. I wasn’t afraid to be a student of my own craft. That hunger to grow is what pushed me to

Pricing:

  • 50 guests catering packages start at $17.00 per person
  • If you find us at a pop up we usually price our tacos $4 each. Heart shaped mulitas (quesadillas) 2x$15 and our pink drinks $8.00
