Hi Rosa, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Casa Rosita’s began with a lot of hard work, love, and a simple goal—to be present for family while still helping support the household. Rosa started her journey when her three daughters were still young. Instead of returning to a full-time job, she began cooking and selling homemade meals to other moms at her daughters’ school. What started as a small effort quickly grew into what became Rosie’s Party Treats.
Rosa was always involved in her community, volunteering through PTA and helping with school fundraisers. Little by little, more people began trying her food—and they loved it. As demand grew, so did her opportunities. She began taking on catering jobs, always saying yes to new requests and putting care, dedication, and love into every plate she served.
To expand her business, Rosa began working out of a commissary kitchen, which allowed her to operate with the proper health permits and continue growing her catering services. Then, about three years ago, everything changed. While driving by an empty donut shop, she asked her husband to stop so she could ask about renting the space. She never imagined that this small moment would turn into Casa Rosita’s.
Shortly after, the property owner—managed by Harley Davidson—reached out and offered her the opportunity to rent the space. With the support of her family, Rosa poured her heart into transforming that location. Together, they cleaned, built, and created what is now a warm, cozy, and welcoming restaurant.
Today, Casa Rosita’s stands as a reflection of Rosa’s journey—a mother’s determination, a family’s teamwork, and a community’s support, all brought together through food made with love.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It definitely has not been an easy road. Opening a food business in Orange County comes with many challenges. From permits, approvals, and modifications to long waiting periods, it can be overwhelming—especially when you’re paying rent on a space that isn’t generating income yet.
Finding reliable staff and working through day-to-day obstacles can also be draining. On top of that, navigating social media, Yelp, and Google reviews has been tough. While feedback is important, sometimes people leave harsh comments that they might not say face-to-face, and that can be discouraging.
Overall, it hasn’t been the smoothest journey, but every challenge has helped us grow stronger and more resilient.
