Hi Samuel, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Hello, I’m Sam, and my professional journey has been a fascinating shift from banking to becoming a Baker. Motivated by a passion for crafting exceptional bread and pastry, I pursued formal education at the Ferrandi School in France. In 2015, I made the decision to move to LA. Subsequently, I gained valuable experience at renowned establishments like Spago Restaurant and Bottega Louie. Following my culinary journey, I took a bold step in 2018 by launching my own business, initially at farmer’s markets. Today, I’m proud to share that my venture has flourished across Los Angeles, with three locations complemented by a presence in six farmer’s markets.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Certainly, navigating the entrepreneurial path has had its challenges, particularly with the disruptions caused by the COVID-19 that many businesses faced. I understand the resilience required to overcome such obstacles, as well as the everyday challenges inherent in the business world.

The biggest challenge was securing a suitable kitchen space for your production needs within a complex real estate environment.

I decided to transition to a brick-and-mortar business model and built out my own kitchen.

Scaling up was indeed a crucial step for our growth and sustainability.

This growth reflects not only my commitment to quality baking but also the positive response from the community.

We’ve been impressed with Des Croissants Paris, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
The fusion of French baking expertise with the vibrant LA food scene, combined with a focus on authentic yet innovative croissants and breads, creates a delightful experience for a diverse community. The dedication to recreating childhood memories adds a nostalgic touch, making our bakery not just a place for delicious treats but a source of cherished moments for our customers.

What makes you happy?
I love the process from creation and experimentation to perfecting the art brings me happiness. Embracing continuous improvement but knowing it’s never perfect and finding a sense of accomplishment in your work journey adds depth and fulfillment to your passion.
