Today we’d like to introduce you to Greg Carlos

Hi Greg, we’d love for you to start by introducing yourself.
I started at the cove bar in 2001 as a bartender. After working for the owners for nearly 13 years, I bought the bar from them and decided to take it in a different direction. Since then we have become a destination for spirits enthusiasts all over the los angeles and the san gabriel valley area. We pride ourselves in having delicious cocktails paired with warm hospitality. The bar is over 70 years old and has the first on premise liqour license issued in west covina. We are a proud community partner and work with multiple charitable originations throughout the year to enhance the city we do business in. We specialize in rare and hard to find whiskey, but cater to all spirits lovers. being the oldest bar in our city, we work constantly to increase our brands awareness as well as carving the path for our businesses future.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The road has not been entirely smooth and in fact, going from bartender to business owner is a very faced pace learning experience that can prove to be expensive and time consuming. Learning all the twists ad turns of navigating regulations, taxes and fees, legality and day to operations is definitely not for ht faint of heart.

Can you tell our readers more about what you do and what you think sets you apart from others?
We create cocktails and ambiance on a day to day basis. We specialize in very rare and hard to find spirits. I am most proud of the transformation of the business and how far each of the staff members have come in terms of their spirits knowledge and grasp of the hospitality industry.

What was your favorite childhood memory?
One of my favorite childhood memories is going to work with my dad who was a self employed plumbing contractor. He taught me the meaning of hard work and responsibility. His biggest point of pride was being his own boss.
