Hi Puin, please kick things off for us with an introduction to yourself and your story.
Started from tasting menus in the living room at my apartment. We ran a little supper club for friends and family with a Thai-influenced menu mix with some Western techniques. We are now serving full-tasting menus at pop-up locations as well as cooking for private events.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
The struggle is that Thai food is perceived as cheap, and people are still not willing to pay a higher price for it. Often, I hear complaints that my food is too expensive for Thai cuisine. I am trying to change people’s perception of our food culture, showcasing the beauty of Thai cuisine beyond simple street food. We are proud of our culture. Also, as an immigrant starting a business in a new country, I need to learn all the regulations and ensure that my business complies with the laws.
Appreciate you sharing that. What else should we know about what you do?
I am a chef, I am running a pop-up called “DAG”, means let’s fuckin’ eat in Thai. We focus on contemporary Thai-inspired dishes in a tasting menu format. With influences from Chinese, Japanese, and Western cuisines, this menu is of its own. From tom yum amaebi tortellini to smoked trout roe chawanmushi with fish maw sauce, you will find familiar flavors from different parts of the world in our menu. We trying to present a new Thai flavors to everyone!
