Viet Nguyen’s story begins in Ho Chi Minh City, Vietnam, where he grew up in the lively environment of his family’s chemical factory. As a child, he was fascinated by the efficient and bustling operation of feeding 4,000 factory workers during their short lunch breaks. This early exposure sparked his interest in the complexities of large-scale food service.
In 2002, Nguyen moved to the United States, seizing new opportunities and further pursuing his passion for food. While in high school, he started working at Pho 999, a Vietnamese restaurant in Van Nuys, California, taking his first steps into the culinary world.
Nguyen’s career path took a unique twist when he entered the tech world, working for an IT firm that specialized in developing point-of-sale systems for restaurants. This experience, combined with his culinary background, enabled him to create an innovative iPad-based point-of-sale system, which gained recognition from Gordon Ramsay on the show “Kitchen Nightmares”.
Ultimately, Nguyen’s passion for cooking led him back to the culinary industry. In 2014, he opened Sup Noodle Bar in Buena Park, marking the beginning of his journey as a restaurateur. His entrepreneurial spirit led to the creation of several more restaurants, with his establishment Gem Dining earning accolades from the Michelin Guide.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Navigating the restaurant industry is inherently challenging, and our journey at Kei Concepts has been no exception. The road to success is often unpaved, filled with hurdles and unexpected turns. Among the most formidable challenges we faced was the coronavirus outbreak and its profound impact on the hospitality sector. We faced the realities of lockdowns, changing regulations, and the economic uncertainties that came with them.
However, we chose to view these struggles as opportunities for growth and innovation. The pandemic was a significant test of our resilience and adaptability. We learned to be more agile, quickly adjusting our business model to meet the changing demands of the market. This period also brought a renewed focus on the health and safety of our staff and customers, which remains a top priority.
Post-pandemic, we emerged with a stronger sense of purpose and a clearer vision for the future. Our team has developed a robustness that allows us to navigate challenges more effectively. The experience was akin to an intense training period, and now, as we face the regular ups and downs of the restaurant business, we are better equipped to handle them.
