Conversations with Randy Leon

Today we’d like to introduce you to Randy Leon.

Hi Randy, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
My career has grown through more than 12 years in Los Angeles kitchens, with a foundation in culinary training at Le Cordon Bleu. From my time as Chef de Cuisine at Girasol to executive chef roles at Los Balcones, Little Pine, Nic’s on Beverly, and Yamashiro, I’ve worked across fine dining, plant-based cooking, and high-volume restaurant operations. Each experience helped shape both my cooking and my approach to leadership. I learned that a successful restaurant takes more than great food—it takes a strong team, consistent standards, and an understanding of the business behind every plate.

In 2026, I took that experience into entrepreneurship by founding Dandelion Concepts LLC, my first business. Today, I’m building a Los Angeles culinary company focused on catering, private dining, restaurant consulting, menu development, and original food concepts. My work now ranges from creating intimate dinners and producing large events to helping restaurant owners turn their ideas into practical, sustainable operations. Becoming a small-business owner has meant taking responsibility for every part of the experience, from the first client conversation to the final dish. It’s an opportunity to build something of my own while putting everything I’ve learned to work for the people I serve.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Everything is a learning experience. Good or bad, you can take something out of anything. Of course there were bumps along the way, nothing in life comes easy. Orders coming late, items missing, cars breaking down on the way to events, staff calling out last minute. Kitchen equipment breaking. There will always be variables. But at the end of the day the job has to be done. So get it done. Learn and better prepare for next time.

Can you tell our readers more about what you do and what you think sets you apart from others?
I’m a chef and the founder of Dandelion Concepts LLC, a Los Angeles culinary business specializing in private dining, catering, menu development, and restaurant consulting. My background includes more than 12 years of culinary leadership at restaurants including Girasol, Los Balcones, Little Pine, Nic’s on Beverly, and Yamashiro. That experience has given me a broad range, from plant-based cooking and fine dining to running high-volume kitchens. Today, I bring those skills into experiences tailored to each client, whether that means a personal dinner, a large celebration, or helping a restaurant develop its menu and strengthen its kitchen operations. Mexican and Peruvian flavors are a particular focus in the food concepts I’m developing, alongside the versatility I’ve built throughout my career.

What sets me apart is that I approach each project as both a chef and an operator. I think about flavor and presentation alongside food costs, staffing, training, and how a dish will perform during service. I want the creativity to translate into something a team can execute consistently and a business can sustain. I’m most proud of taking the experience I gained leading other people’s kitchens and building a business of my own. Dandelion Concepts is still growing, and I’m involved in every detail. For me, success means creating food people remember, supporting the people who help deliver it, and building lasting relationships through hospitality

What’s next?
My next chapter is focused on growing Dandelion Concepts through private dining, catering, restaurant consulting, and original food concepts. One of the projects I’m most excited about is Culturas, opening soon at Jungla NoHo in North Hollywood. We’re bringing together Mexican and Peruvian influences through brunch, dinner, and curated tasting menus, creating a place where people can gather, explore different flavors, and feel welcomed. It’s an opportunity to bring my experience and creative vision into a dining experience with its own identity.

Alongside Culturas, I’m continuing to develop C*VECHERIA, centered on Mexican and Peruvian coastal flavors, and Amargón De Leon, a premium vegan tamale brand. As these projects grow, I want to build a strong team and create opportunities for other culinary professionals. My priority is thoughtful growth, with the systems, relationships, and consistency each project needs to succeed. What I look forward to most is welcoming guests to Culturas and seeing ideas we’ve spent so much time developing become dishes and experiences people return for.
