Rising Stars: Meet Alessandro Frassica of Firenze Los Angeles

Today we’d like to introduce you to Alessandro Frassica

Hi Alessandro , so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
Alessandro Frassica, owner of the “INO” shop in Florence, describes himself as a “sandwich chef”.
And what sandwiches…
great attention to ingredients and careful selection of producers make his sandwiches a legend.
From New York to Tokyo, via Dubai, New Delhi, Los Angeles and Sydney, many have had the pleasure of biting them during his events and lectures.
From Florence, with a past in the world of fashion and as a food critic, in 2006 he decided that the future of street food would be quality and that the sandwich would become the tool for making great ingredients and great producers known.
His idea was successful and in a very short time the Florentine laboratory in Via de’ Georgofili became a pilgrimage destination for gourmets from all over Italy and beyond.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
At every step of my career I have always followed my culinary philosophy which focuses on a primary objective: to give moments of happiness and unique culinary experiences that involve not only the palate, but above all the heart and soul.
And all this…with a pan’ino’
Fundamental for me is the Italian spirit, with the joy of sharing special moments.
In my panin I mixe flavors, textures and creativity, that respect tradition, projecting it in a contemporary way

For me, the panino is a tool for telling stories about people, ingredients, territories.
