Today we’d like to introduce you to George Galajian.
George, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
We are three owners and we all love to cook in the kitchen and try new things so one day we set out to build our own Nashville hot chicken sandwich. We went and purchased a commercial grade fryer and everything else needed to create our masterpiece. After we made Nashville style fried chicken for ourselves we decided to cook for family and friends. This turned out to be a great success and it had a snowball effect.
The hype kept growing and more and more people kept asking about our chicken and where they can try some. This leads us to strategically picking the Fashion Square Car Wash in Sherman Oaks to set up our “pop up” and start serving. We are now a stable in Sherman Oaks and a favorite stop for all the locals, even the local PD loves our food. The success at Sherman oaks leads us to Hollywood where we opened our first actual brick and mortar which is accompanied by a full bar rite on Hollywood Blvd.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
We have had ups and downs and we are still battling for our city conditional use permit which allows us to serve alcohol to the public at our Hollywood location.

We are the best hot chicken tender in the game right now. We were skeptical at first but after being part of TenderFest we quickly realized that our chicken qualify accompanied by our Nashville dry rub that we created in house is easily the best tender you can get. We use our tenders to put together sandwiches, sliders, nuggets, loaded fries, and much more.
If you had to go back in time and start over, would you have done anything differently?
If we had to start over we would have just started sooner had we known our version of Nashville Hot Chicken would be such a hit!
