OniGuru – Our Story
OniGuru was created with a simple vision: to bring authentic, clean, and modern Japanese comfort food to everyday life in Southern California. What began as a small idea inside Concept Restaurants LLC quickly evolved into a fast-casual brand defined by quality, consistency, and an elevated guest experience.
We launched our first shop with a fresh approach to onigiri and rice bowls—focusing on premium ingredients, streamlined service, and a menu that balances tradition with modern taste. The response from the community was immediate and incredibly encouraging, which allowed us to expand steadily with the support of committed investors who believed in the long-term potential of the brand.
Today, OniGuru operates across three growing Southern California locations:
• Ladera Ranch – Our flagship model inside Mercantile West, known for its high foot traffic and strong community loyalty.
• Garden Grove (SteelCraft) – A dynamic, open-air food hall environment where OniGuru became a destination for guests looking for fresh, flavorful Japanese meals.
• Mission Viejo (The Shops at Mission Viejo Food Hall) – Our newest buildout, designed as a polished, high-volume mall location delivering fast, efficient service for families, shoppers, and local workers.
Across all stores, our mission remains the same: offer fresh, approachable Japanese food prepared with care, served with energy, and supported by a system built for scalability. As we continue expanding, our goal is to grow OniGuru into one of Southern California’s most recognizable fast-casual brands—supported by strong operational standards, passionate partners, and a commitment to delivering reliable quality every day.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Building Oniguru has been an exciting journey, but definitely not a simple or linear one. Like most growing restaurant groups, we’ve faced our share of challenges. One of the biggest has been navigating the realities of opening multiple locations across different cities, each with its own permitting requirements, landlord expectations, construction timelines, and operational nuances. Ladera Ranch, Garden Grove, and Mission Viejo have all taught us something different — from unexpected build-out delays to adapting our menu flow to match each neighborhood’s foot-traffic patterns.
Another key challenge has been scaling our systems while maintaining the handcrafted quality that defines Oniguru. As we expanded, we had to re-engineer our back-of-house processes, streamline sourcing, and invest heavily in consistent training so every bowl and onigiri reflects the same standards, no matter which location a guest visits.
Staffing, especially in a tight labor market, has also required creativity and persistence. We’ve built a strong internal culture, but it took time — and plenty of learning — to find the right team structures for a fast-casual brand with high service expectations.
Ultimately, the challenges pushed us to become a more resilient, more organized, and more thoughtful company. Every obstacle became part of the system we now operate with, and those lessons are a big reason we’re ready for continued growth.

Concept Restaurants LLC is a Southern California–based hospitality group focused on building modern, efficient, culturally inspired fast-casual brands. Today, our portfolio includes OniGuru, a Japanese rice-bowl and onigiri concept, and PastaPhony, a fresh-pasta-and-salad eatery. Across both brands, our goal is consistent: deliver fresh, high-quality food with fast service, simple operations, and strong brand identity.
OniGuru is known for its made-to-order rice bowls, hand-crafted onigiri, and clean Japanese-inspired flavors. We’ve grown the concept across key Orange County locations including Ladera Ranch (Mercantile West), Garden Grove (SteelCraft), and Mission Viejo (The Shops at Mission Viejo Food Hall).
PastaPhony brings a completely different energy — customizable fresh pasta, salads, and Italian-inspired bowls. The brand emphasizes fun, color, and accessibility while still focusing on fresh ingredients and speed. We currently operate in Fullerton, with additional locations and opportunities in development.
What sets our group apart is our multi-brand, multi-unit operational system. Instead of approaching each restaurant as a standalone project, we’ve built a structure that supports consistent quality, rapid build-outs, streamlined training, efficient labor, and strong branding across all locations. Our branding is intentionally simple, modern, and highly recognizable—something we’re very proud of and continue to refine.
We’re also known for our investor-friendly structure, offering a platform that helps operators step into business with support, systems, and proven concepts. This has allowed us to grow steadily while keeping quality and brand standards tight.
