Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started? 
Celebrity Chef Sanjay Jaitly is a culinary excellence; with his roots back home and multi-diverse experience, he has made a mark in OC with his flagship restaurant concept, Yantra Kitchen. His journey in the culinary industry is one of a kind, hailing from diverse Indian background at a very young age he ventured to Great Britain for mastering his culinary expertise with great knowledge of flavors and a bag full of dreams, he was right on the path of culinary excellence. He gained exceptional training under world-renowned Institutions in England, after which he worked with a chain of hotels such as Taj and Oberoi. 

We all face challenges, but looking back, would you describe it as a relatively smooth road?
Fortunately, all good. Over the period of time, Chef Sanjay Jaitly moved to the United States with a vision to make a mark in the Indian Food Industry. Sunny California was charmed by his cuisine, a mix of Indian flavors with continental techniques. Tantra, his very first fusion concept in Laguna, did phenomenally well, earning him accolades and praise from far and wide. Taking the journey forward and more accessible, he has embarked on an incredible journey with Yantra Kitchen.

Yantra kitchen is a fusion Indian fine dining concept, catering to clients who love Indian Food in a varied range, his clients range from loyal patrons from Tantra to young adults who fall in 2nd gen Indian American category. His concept with Yantra Kitchen is to introduce numerous Indian Dishes to clients with a palate appreciative of flavour. ‘I intend for every individual to know the fabulous flavors of Indian Cuisine, our culture has a lot to offer, and I am here to spread awareness and share the journey.’ In the year 2024, with three years in business, Yantra Kitchen is planning to host several Chef tables inspired by seasonal harvest and an extraordinary selection of wines, with wine pairing.
