Today we’d like to introduce you to Marc Moubarak.
Hi Marc, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
L’APPART by AIR FOOD is above all two passionate visionaries, Marc and Thierry. They have come from two completely different paths.
One was a contractor in logistics the other a chef in London and Paris. What they both have in common besides the love of good food is the love of sneakers & the Hypebeast culture. Years ago they met in Paris during a regular sale of shoes at the Place de la République… From this meeting, the pair launched into a collaboration of sharing their passion for food.
They started with pop-up restaurants with the aim of offering gastronomic street food to all, ranging of mixed recipes from different cultures & street food. Then they had a brainwave, resulting into transforming their Pop-up shops into a brick & motor restaurant in Downtown Los Angeles. From PARIS to LA, come travel with us as we take your tastebuds and experience through a miracles journey through our lives. From the traditional French cuisines to our French & World Fusion from Europe, Middle East, Africa to North America. Embark on a journey & experience that’s priceless.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
We opened in October 2019 right before Covid… we’re from France so it was very difficult for us during this period of time… Living day by day thinking if we’ll be able to go through the pandemic… but we did it.
Our biggest challenge after that was dealing with the American employees, we have to a different ways to work in a restaurant and the skills are also very different so we had to adapt.
We’re in Los Angeles and customers are always looking for new dishes, new experiences, so we’re constantly reinventing ourselves, working on some new dishes…. We updated our menu every month.
Can you tell our readers more about what you do and what you think sets you apart from others?
We serve a traditional French cuisine with a modern twist. This twist comes from the rich melting pot of LA, and from the weather, many vegetables are available all year.
The restaurant is popular due to a good balance between our price and the quality we propose.
Honestly, we are proud to be alive after the pandemic. It was the hardest moment for us. We worked 7/7 did many jobs to survive.
Our biggest difference than the others is “the priority”. I mean our concern is not to have 15 waiters and a 2 million dollar restaurant build by a famous designer. Our priority is the plate and the experience. It’s important for us especially in our neighborhood to create a French universe and serve the best food for $30 and under.
