Today we’d like to introduce you to Jay Scollon.
Jay, please share your story with us. How did you get to where you are today?
Restaurants and cooking grabbed my interest at a young age. As a teenager, I became involved in the restaurant life and there was no turning back and no regrets. My career path has guided me to contrasting (and all beautiful) places. From the playboy mansion to dude ranches, and a few places in between.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Most days bring some sort of obstacle as I’d imagine that happens in most fields. Cooking is a transient occupation. One of the most difficult parts is training new cooks and retaining the good ones. When the staff is great it makes life much more enjoyable.
City Tavern – what should we know? What do you guys do best? What sets you apart from the competition?
We have a few restaurants in our group. Gastropub is the most fitting category as a blanket term. We make great, approachable comfort food, have extensive beer collections and make great drinks. All with pleasing aesthetics, upbeat service, and a relaxed environment. Everyday appeal, occasion worthy.
What is “success” or “successful” for you?
Personally, I ask myself if I’m happy. Are you proud of the progression and pleased with the direction? I’m a positive influence on the business and everybody involved in it on a daily basis… oh yeah, how’s the food?
