Hi Supawat , can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
With over 16 years of experience, Chef Tim Supawat Anantachaisilp has sharpened his skill in traditional Japanese Cuisine under the guidance of authentic Japanese restaurant owners. From Mastering the art of rice preparation and fish handling to perfecting sushi making in the true Japanese style. Chef Tim’s Journey has been remarkable.
He further improved his expertise by working at an Omakase restaurant in Beverly Hills for an additional 2-3 years. During this time, he learned more about the Omakase style, which focuses on personalized, high- quality dining experiences.
With the support and encouragement of his mother, Chef Tim achieved his dream of opening his own sushi restaurant. Ananto Sushi, Named after his family surname, Ananto Sushi offers a simple yet elegant Japanese ambiance, creating a nostalgic experience of diners. Our Menu is carefully designed to highlight sushi and sashimi, focusing on the freshness of the fish and the premium quality of sushi rice.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Opening a restaurant is never easy. We started with only one amount of support from my mother to build this restaurant, and it was not a large amount of money. We had to carefully calculate every single expense to make sure the business could maintain healthy cash flow and continue moving forward every day.
We never had enough budget to hire professional marketing or advertising teams like bigger restaurants. What we do have is a strong foundation, attention to detail, and strict quality control in every step of the process — from selecting ingredients, preparing the fish, to every plate we serve.
For us, sushi and sashimi are not just food. They represent our passion, care, and pride as a small family-owned restaurant. We truly want every customer to experience quality and authenticity in every bite
Alright, so let’s switch gears a bit and talk business. What should we know?
We are a small family-owned sushi restaurant called Ananto Sushi located in Stevenson Ranch, California. Our restaurant was built from passion, hard work, and a dream. He has over 18 years of experience working in sushi restaurants, and opening our own place was always something we hoped to achieve together as a family.
Starting the business was not easy. We began with very limited resources and had to carefully manage every expense to keep the restaurant running. Because we didn’t have a large budget for marketing or advertising, we focused instead on building a strong foundation through quality, consistency, and genuine customer service. Every part of the restaurant is very personal to us because we are involved in every detail every single day.
What makes us different is our philosophy of “minimal style with authentic taste.” We believe great sushi should highlight the freshness and quality of the ingredients instead of relying on heavy sauces or overwhelming flavors. We focus on serving sushi and sashimi in a more authentic and traditional style while still creating a warm and welcoming dining experience for everyone who visits.
One thing we are especially proud of is the trust and support we’ve received from our local community. Many customers have supported us since the beginning, and seeing families, friends, and regular guests continue to come back truly means everything to us. As a small business owner, those relationships are what keep us motivated through both the good and difficult times.

What makes you happy?
What makes me happiest is seeing customers genuinely enjoy the food and experience we create at Ananto Sushi. There’s something very rewarding about watching families and friends gather around the table, enjoy fresh sushi together, and leave with smiles on their faces. Knowing that people choose to spend their special moments, celebrations, or even simple dinner nights with us means a lot.
As a small family-owned business, we put so much care into every detail, so hearing customers compliment the quality of the fish, the service, or the atmosphere truly makes all the hard work worth it. It reminds us why we started this journey in the first place.
I’m also happy knowing that we built this restaurant from the ground up with limited resources, determination, and family support. There were many difficult moments along the way, but overcoming those challenges together has made the experience even more meaningful. Seeing the restaurant continue to grow and being able to support our family while doing something we love gives me a strong sense of pride and gratitude.
