Hi Jin, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
The idea for my business came from the major shifts I observed in the restaurant industry after the pandemic. One of the biggest changes was in customer preferences, with a growing demand for convenience and healthier options. Even as things returned to normal, the habit of ordering takeout and delivery remained.
I saw an opportunity to meet this demand by creating a fast-casual concept that offers high-quality, convenient meals. That’s where musubi became the centerpiece of our menu. It’s naturally portable, versatile, and can be made with a variety of ingredients, making it a great fit for today’s busy lifestyle.
By making all of our sauces in-house and focusing on simple, well-prepared ingredients, we’re able to deliver musubi that offers both flavor and consistent quality.
More recently, we introduced a new concept—musubi tacos—which quickly gained attention and popularity. We’ve seen a noticeable shift in customer orders, with many guests now choosing musubi tacos over traditional musubi. It’s been exciting to see how this new menu item resonates with our customers and continues to shape the direction of our brand.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Like many others, the journey hasn’t been easy. Before opening this business, I had to close down a previous restaurant, which was one of the most difficult decisions I’ve faced.
With over 20 years of culinary experience, I started again with confidence, but I quickly realized that great food alone isn’t enough to succeed. I had to learn how to better understand customer preferences and adapt to their expectations beyond just taste.
That process helped me grow not only as a chef, but also as a business owner.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
As a chef with over 20 years of experience, I specialize in creating simple but flavorful dishes. Some people assume that because of my experience, our menu comes together easily—but in reality, each new item goes through a long process of testing different ingredient combinations and learning from many failures before it’s finalized. I see it as similar to a scientist developing a final product through repeated experimentation.
What sets me apart is my focus on balance, consistency, and attention to detail, even in simple dishes. No matter how challenging the business environment becomes, I’ve made it a principle to never compromise on the quality of our food. I believe that maintaining that standard is what builds long-term trust with our customers.
What I’m most proud of is seeing customers enjoy the food and recommend it to others. Watching someone share that experience with the people they came with is the most rewarding part of what I do.
Are there any important lessons you’ve learned that you can share with us?
When I first started, I didn’t fully understand why I was doing this work. I spent long hours on my feet every day, often pushing through physical challenges, and I seriously questioned whether this path was right for me. There were moments when I enjoyed the work, but there were also times when I considered changing my career.
During that time, I kept experimenting—trying new ingredients and exploring different cooking techniques from various cultures to create my own dishes.
Looking back now, I understand why I went through those experiences. They shaped who I am today and brought me to where I am now.
The most important lesson I’ve learned is that everything has a purpose. Even when you don’t understand it at the time, those experiences eventually come together and help you grow.
