Rising Stars: Meet Miguel Gonzalez of San Diego

Today we’d like to introduce you to Miguel Gonzalez.

Hi Miguel, please kick things off for us with an introduction to yourself and your story.
My path into hospitality actually started out of necessity. Right after high school, I was looking for any work I could find.
By a stroke of luck, I landed my first job as a line cook. Here at this particular spot, we were line cooks in front of guests. Similar to Chipotle style ordering.
Later on, I moved into a dishwasher position at a private golf club, and that’s where I really started to witness the magic of events, banquets, charity and fashion galas. I watched how an empty space could be transformed for a single night, and that experience stuck with me as I moved through various front-of-house positions, from host/greeter to server assistant to bartending.
All it took was an employer to ask if im willing to learn a new position since they needed to fill it quickly. I agreed eventhough I had not a single lick of experience with spirits, just experience of supporting and helping others under my belt. I fell in love with the craft and I enjoy every moment that im behind the bar.

Now that I’m a full-time bartender, I’ve realized how much I love the proximity to people. You’re closer to the guests than almost anyone else in the room, and I found myself exchanging stories and experiences with people on a daily basis.

Of all the things I hear across the bar, the ones I enjoy most are love stories. I remember working a wedding one night and feeling the incredible warmth and energy of the setting. At the time, I was just helping out and doing my thing, but then it hit me: I was part of one of the most important days of these people’s lives. I wasn’t just pouring/mixing drinks; I was a small part of their love story.

I started Neat & Noble because I wanted to lean more into that connection. I wanted to help couples tell their story through what they serve their guests. Whether that’s recreating the cocktails from their very first date or crafting a custom menu that perfectly fits their taste buds to remember forever. To me, it’s those little details that matter.

People might come to the bar for a drink, but they stay for the experience. Being the person who gets to add that extra layer of magic to a couple’s big day is why I do this. At the end of the night, if the host is happy and the story was told right, I know I’ve done my job.

We all face challenges, but looking back would you describe it as a relatively smooth road?
It definitely hasn’t been a walk in the park. Someone once told me that owning a business is “personal development on steroids,” and I’ve found that to be 100% true. The biggest challenge was the mental shift from being an employee to being the entire infrastructure.
One of the most humbling lessons I’ve learned is that, starting out, nobody knows who you are. You have to wake up every day and essentially claim your space. You have to present yourself as the best in the business and then go out and perform at 110% to back that up. It’s a constant effort to show others that you exist and to prove why you’re the right person to hire. You are your own best advocate, and that pressure to consistently deliver excellence is a huge part of the growth.
In this journey, you will have ups and downs. I’ve noticed that during those “down” times, many business owners reach a breaking point where they quit or stop pursuing their goals. For me, those moments are where the real growth happens. It’s about having the grit to stay the course when things are quiet and having the discipline to keep pushing when the initial excitement wears off.
The deepest challenge has been the balancing act. I started this business to have the flexibility to be on my own schedule and prioritize time with my family, but the reality of the events industry is that you’re working when everyone else is celebrating. Finding the middle ground, where I can give 100% of myself to a couple or client on their big day while still being present for my own kids and family, is a work in progress.

Every obstacle has forced me to grow faster than I ever would have in a traditional job. It’s a constant cycle of learning, failing, and adjusting.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I provide a professional dry hire mobile bar experience for weddings and private events. Due to California laws regarding alcohol service I bring everything required for the bar except for the actual spirits. This means I provide the bar setup the custom mixers the ice the garnishes and the professional expertise while the client provides the alcohol. I source my ingredients at Specialty Produce where Michelin awarded chefs shop to ensure that every drink features fresh seasonal components of the highest quality. This commitment to quality allows me to be incredibly creative when a client has a specific vision.
For example I recently worked with a groom who wanted a boba inspired drink. We showcased our work during the tasting by creating a vodka Kahlua martini with a vanilla Thai tea syrup and it was an absolute hit.
Winning the Stellar Business Award for 2025 was a significant milestone and I have also earned a Best of Zola badge which reflects the trust my clients place in me during their most important celebrations.

What sets me apart is the fact that I have lived every part of this industry. I have been the dishwasher and the line cook as well as the host and the server assistant. Having worked all of those different roles gives me a unique perspective on the flow of an event that most people do not have. I see the whole picture. Additionally being bilingual is a core part of my service. It allows me to bridge the gap at events where multiple cultures are coming together so that every guest feels welcomed and understood. My goal is to handle the heavy lifting and use my years of experience to make sure the host finally gets to enjoy their own party.

Is there a quality that you most attribute to your success?
I believe the most important quality for success is resilience combined with the drive to perform at 110 percent every single day. When you are building a brand from the ground up you quickly realize that nobody knows who you are at first. You have to wake up every morning and claim your space in the industry. You have to prove you exist and show people why you are the best choice for their most important celebrations.

Success requires a level of discipline that goes far beyond the creative side of making drinks. It is about doing the work that nobody actually wants to do. Nobody really wants to spend their day sending follow up emails or creating content to stay visible but we have to put in that specific work to get the results we want. You have to be willing to handle the repetitive and sometimes uncomfortable parts of the business with the same energy you bring to the bar.

There will always be ups and downs in this journey. I have noticed that many business owners stop pursuing their goals when they hit a quiet period or a difficult hurdle. For me those down times are where the real growth happens. It is about having the grit to stay the course when the initial excitement wears off and keep pushing when others might quit. Being a business owner means being your own biggest advocate and having the discipline to deliver excellence every single time. If you can stay consistent during the quiet moments the results will eventually speak for themselves.
