Lucia Gill

Hi Lucia, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
As parents, we experienced a sense of frustration while navigating the grocery store aisles, diligently reading product ingredient lists. We were taken aback by the prevalence of questionable and unnecessary components in both conventional and organic snacks marketed for our precious children’s consumption. This heightened awareness prompted us to curate a significantly restricted list of “acceptable” snacks for our kids, leading to considerable time spent in the kitchen attempting to replicate their favorite savory and dessert treats. Through numerous trials and errors, we discovered that our homemade alternatives surpassed or equaled the taste of our store-bought counterparts. Consequently, we found it increasingly difficult to justify purchasing pre-packaged treats and offering them to our children under the label of “food.”

This commitment became a laborious endeavor and eventually evolved into a profound personal dedication. Fortuitously, over the past few years, several companies have emerged, sharing our values and offering products crafted with high-quality ingredients, which eased our reliance on homemade snacks.

Currently, my focus lies in acquiring new techniques and innovating delicious and delightful organic desserts. The inability to find a local bakery that adheres to our standards of using organic ingredients and high-quality oils compelled me to embark on baking endeavors for my children, family, and friends. Their appreciation and encouragement for my pastries became evident, particularly during the 2020 pandemic. The circumstances during that time led me to concentrate on baking and experimenting with cake and dessert-making, particularly as my daughter’s birthday approached amidst the shutdown, where I aimed to ensure she had a memorable celebration with the best possible birthday cake.

Now, after a couple of years, I took a leap of faith and officially launched Philosophy Eats, an organic bakery, to share our clean and organic treats with our local community and the surrounding areas. This decision was fueled by immense pride in our creations and the desire to extend their availability to others, fostering a deeper connection with the community we serve.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
As a new business owner, I encountered a formidable obstacle that primarily resided within my thoughts—the fear of failure and the potential rejection from my customers, despite the overwhelming outpour of support I received. Baking holds immense personal significance to me, as it emanates from the depths of my heart, and my life revolves around the kitchen. Within this space, profound conversations take place, problems are discussed, and joyous celebrations occur. Food serves as a unifying force, bringing people together in shared experiences. My apprehension was not merely about someone disliking my pastries but also stemmed from the desire to establish a profound connection with them on a deeper level through my baking endeavors.

Thanks – so what else should our readers know about your work and what you’re currently focused on?
