Today we’d like to introduce you to David Thomas.
Hi David, please kick things off for us with an introduction to yourself and your story.
Owner of BakerDave’s, in Tustin. I believe my story truly began as a young boy watching my mother and grandmother ⁹making peach cobblers and banana puddings for family functions and celebrations. After graduating from the Riverside Culinary academy in 2010, I quickly took to the idea of gaining as much knowledge and experience as I could. After nearly 11 years and the pandemic, I decided to open BakerDave’s to start putting in work to fulfill my true dream of owning my own bakery.
I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
I would definitely say the road hasn’t been completely smooth. One of my biggest obstacles was learning the restrictions for a Cottage Food Operation. If I had a specialty, it would be cheesecakes, and learning that I couldn’t sell them at my markets and popup events was hard to take, but I’ve luckily gained experience making a large selection of items so I had a few different options on what to pivot to.
Can you tell our readers more about what you do and what you think sets you apart from others?
BakerDave’s is a Cottage Food permitted bakery. I make a various selection of different pastries and desserts. In my career, I’ve been most known for my Cheesecakes and the various flavors that I make. My Cheesecake are also what I’m most proud of. I would say start sets me apart is my determination to always get better.
Can you talk to us a bit about happiness and what makes you happy?
Community. I’ve always had a great community behind me and its always made me happy to know that I have a place in it. Bringing joy in the form of cakes and pastries to the people around me. Most of the reason I joined the food industry is because I enjoy knowing that my work can bring even a small amount of happiness into someone’s day. Whether it be a cake to say happy birthday, cupcakes to share at a party, or even the something as simple as a cookie.
