Rising Stars: Meet Darrell Gillcrese of Los Angeles

Today we’d like to introduce you to Darrell Gillcrese

Hi Darrell, thanks for joining us today. We’d love for you to start by introducing yourself.
I started cooking at the very young age of 9 years old. I was raised in a multicultural environment and got to experience a variety of foods and cooking techniques. I recognized the similarities in Latin and Afro cultures and food, it only made sense to create a fusion so people could enjoy it all-In one place! You should be able to enjoy soul food and tacos in the same experience. I was invited by a friend to compete at a local chili competition- Malibu Chili Festival. I showed up at the event and created a phenomenal chili that wins with the people every year for the last 11 years! Love Muff Chili is a staple at Mestico! And there is so much more. From Sweet Potato Pie to Nanny’s Mac & Cheese to Paella! Mestico does it all- for the people!

We all face challenges, but looking back would you describe it as a relatively smooth road?
Dreams are not made without hard work and dedication! My passion for great food fuels my fire and keeps me going 18 hours a day, 7 days a week! I’ve worked 2-3 jobs at a time to invest in this dream. This dream started 13 years ago. We’ve done Catering, Farmers Markets, private parties, non profit events and holiday menus. My dream is to open a brick and mortar restaurant in Los Angeles! We will be a place where people can enjoy the best food ever!

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I’ve been described as a creative person. I came to California with a dream of being a stylist with a one way bus ticket and an acceptance letter to a Los Angeles fashion college. After trying many creative avenues I found myself always coming back to what I know best which is food. Mestico was born from creativity and a passion to make people happy with food.

We’d love to hear about any fond memories you have from when you were growing up?
At age 13 I was tasked with making a complete Thanksgiving dinner for my family. I enjoyed every minute in the kitchen, listening to Luther Vandross, dancing and creating, But the best part was watching my family enjoy the meal. The pleasure I get watching people enjoy my food never gets old!
