Today we’d like to introduce you to Zach Swemle. They and their team shared their story with us below:
Zach and Marlee met working in restaurants in New York City and later started a mobile pizza oven operation which evolved into a full-service catering and events company as well as a reputation for making some of the most special pizza in town.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
Our path to growth has been organic and natural, slightly rocked by the shifts of the pandemic years. However, we feel very fortunate to be in an industry that is always in demand. Pizza serves everyone, all the time. We will always evolve and change our method of delivery, literally and figuratively, based on the times and what the people want. For instance, during the pandemic, we shifted to a frozen offering and delivered to the doorsteps of our fans all over LA and OC.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
Chef Zach is known for creating some of the most special pizzas in the city.
His history with food, specifically his time spent learning to nixtamalize corn tortillas while an executive chef for Danny Bowien, provided him with an intimate knowledge of dough, its variables, and sensitivities and allowed him to perfect our sourdough recipe. He does not boast a traditional bread-baking background but rather uses his collective experience with Italian (Pizzeria Delfina and Il Buco), Sichuan Chinese (Mission Chinese and Mission Cantina), and Mexican cuisines to inspire the perfect pizza. It’s simple but done well, with wonderful ingredients.
Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
La Morra is very much so a joint venture by partners Marlee Blodgett and Zach Swemle. Life partners and business partners have always inspired one another with their genuine love and understanding of hospitality.
