

Today we’d like to introduce you to Ross Pangilinan.
Thanks for sharing your story with us Ross. So, let’s start at the beginning and we can move on from there.
Growing up, I always wanted to become a chef and own restaurants. I went to Le Cordon Bleu Culinary School straight out of high school. I worked many jobs and worked my way up. I worked in France, Las Vegas, New York, Los Angeles and spent most of my career in Orange County. I opened my first restaurant Mix Mix Kitchen Bar November of 2016. We were named Best New Restaurant by Orange Coast Magazine in 2017 and received a Michelin Bib Gourmand in 2019. September of 2018, I opened my second restaurant in the South Coast Plaza called Terrace by Mix Mix. I currently just opened my third restaurant Remix Kitchen Bar at The Long Beach Exchange.
Has it been a smooth road?
We were on an uphill trajectory with our restaurants until the Pandemic started. It put everything to a complete stop. Sales stopped, but bills continued. With government loans and being aloud to reopen we are restarting from the very beginning. But instead of opening one restaurant at a time, I am opening three. Some of my staff were better off on unemployment and have not returned to work. A lot of new employees, training and additional training to follow new safety guidelines is a constant work in progress. We have a long road to go to get back to where we were.
So let’s switch gears a bit and go into the Remix Kitchen Bar story. Tell us more about the business.
Mix Mix Kitchen Bar, Terrace by Mix Mix and Remix Kitchen Bar are chef-driven restaurants that serve an eclectic menu that draws inspiration from French, Italian and Asian culture. We are proud of our recent new restaurant openings and we have been able to promote and mentor employees from within the company. We have achieved several awards and maintain high standards at our restaurants. We also specialize in off-site catering and in house special events. Each restaurant is unique and has a different layout and vibe.
How do you think the industry will change over the next decade?
In the future, I think having small restaurant footprints will work in our benefit since people will likely avoid big crowds when possible. Take out and delivery will continue to grow and get oversaturated. I believe in hospitality and guests being able to relax and be comfortable in our restaurants. Dining out is one of my favorite things to do especially at unique restaurants, so I believe in sticking to this model.

- 4 course Prix Fixe menu $50 – Guest can select 1 snack, 1 small plate, 1 main course and 1 dessert
