Meet Rebecca Saldivar of The Hop Stop

Today we’d like to introduce you to Rebecca Saldivar.

Hi Rebecca, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
My husband Mark and I, went to the Great American Beer Festival in 2017 and we were very inspired to open our own craft beer bar, given our history in the Craft beer industry. My husband worked for San Diego Brewery for 18 years. I started my career at Callahan’s (same owners as SDBC) in 2010. Then moved on to help open The Cork and Craft at Abnormal Beer Co. From there I moved on to work at Second Chance Brewery, Urge Gastopub in Rancho Bernardo and Ballast Point Brewing in Miramar.

Our original vision was a small tasting room with 20 taps and food trucks. The property owners however, wanted us to run a kitchen so hence why we have a full restaurant. In hindsight, we are so thankful to have a kitchen. We opened during Covid, September 11th 2020 and we wouldn’t have been able to open without food available to our guests.

We are so lucky and humbled to be so profitable through such weird times. Our community has rallied for us and continue to support our business. We are also seeing a lot more San Diego communities coming through our doors and still after a year of opening, we continue to get new guests daily.

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
Covid rules really took a toll on us as owners and the employees. The rules changed constantly and trying to stay open and continuously maintain the standards that were put upon us was definitely challenging.

Alright so before we go can you talk to us a bit about how people can work with you, collaborate with you or support you?
I do live music every Sunday from 4:00-7:00 and Trivia Mondays from 6:00-8:00. I also do fundraisers for schools and sports teams once a month. I have also ran a fundraiser for National Autism Foundation Research as our 12 year old son has autism. We will also be doing a fundraiser in the near future for Mental Health (we ran a small fundraiser during our 1 year anniversary party).
