I’m thrilled to share my journey with you. It all began when I met my wife, Tiffy Lov, in 2019. As a chef with nearly 40 years of experience in the kitchen, I had mastered traditional Nigerian cuisine, but I knew little about alkalinity. Tiffy introduced me to the world of alkaline foods and encouraged me to reinvent Nigerian dishes using alkaline ingredients. With her guidance and my culinary creativity, I experimented and perfected my craft. The result? Alkaline versions of traditional Nigerian meals that taste just as delicious! Today, I’m proud to be known as the Nigerian Alkaline Chef, thanks to Tiffy’s inspiration and support. And now, we’re thrilled to share our passion with the community through our restaurant, Nkwagala Concept/Cafe in Los Angeles, where we serve up flavorful, alkaline dishes that nourish both body and soul.
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
Far from it! Our journey has been marked by significant challenges. One of the earliest hurdles we faced was securing a restaurant space. Despite our good credit and sufficient funds, we encountered numerous obstacles when trying to lease a larger space that would allow our customers to fully experience our vibe. Landlords would often approve us on paper, only to change their tune when we met in person, adding unexpected requirements like additional security deposits, square footage expansions, and costly upgrades to bring the property up to code. These setbacks were frustrating, but we persevered and eventually found a space that aligns with our vision. However, it came with a twist – the space only allowed us to operate as a cloud or ghost kitchen, limiting us to delivery and curbside pickup only. While this wasn’t our original plan, we’ve made the most of it and are grateful to still be able to share our alkaline cuisine with the community.

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
Over the next 5-10 years, I envision the health and wellness industry shifting towards a more holistic approach, with a growing demand for plant-based alkaline nutrition. At Nkwagala Cafe, we’re poised to be at the forefront of this trend, expanding our reach to new states and countries. We’re excited to bring our unique offerings to new markets, including Augusta, GA, and internationally to Uganda and Nigeria, where we plan to establish tourist centers with spas, healing centers, and bistros. Our goal is to make our products accessible to customers worldwide, potentially through partnerships with leading retailers like Whole Foods, Sprouts, Aldi, and Walmart.
Moreover, we’re passionate about empowering local communities to take control of their health through alkaline nutrition. In Uganda, we’ve established non-profit organization dedicated to teaching locals about the benefits of alkalinity and how to heal themselves through nutrition. We believe that by sharing our knowledge and expertise, we can create a ripple effect of wellness that extends far beyond our cafe’s walls. With a robust agenda ahead, we’re eager to continue innovating and pushing the boundaries of what’s possible in the health and wellness industry.
