Today we’d like to introduce you to Paolo Beatino
Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
My journey has been anything but conventional. I started as a law student at the University of Turin, but to support my studies, I took a job as a bartender. What began as a simple way to earn money quickly turned into a passion—I fell in love with the craft, the creativity, and the ability to bring people together through cocktails.
After graduating, I had a choice: pursue a career in law or follow my passion. I chose the bar. I dedicated myself to mastering mixology, working my way up through some of the best bars in Italy. Over the years, I competed in and won cocktail competitions, worked as a brand ambassador, and eventually became the Head Bartender and Bar Manager at GAF in Cambiano.
My journey then took me beyond Italy. I co-founded my LLC here in Los Angeles, bringing the Italian aperitivo culture to the U.S. I’ve also had the honor of leading masterclasses at Casa Martini and Terrazza Martini, sharing my knowledge and passion for mixology.
Now, I’m focused on pushing boundaries—creating innovative cocktails, curating menus that tell a story, and making every drink an experience. For me, bartending is more than mixing drinks—it’s about connection, storytelling, and passion.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Definitely not! Like any path worth taking, mine has been full of challenges, but I wouldn’t change a thing.
One of the biggest struggles was making the decision to leave behind a traditional career in law to pursue bartending full-time. It wasn’t easy—many people questioned my choice, and I had to prove, first to myself and then to others, that this was more than just a job; it was my passion and my calling.
Building my career in mixology meant long hours, constant learning, and pushing myself creatively every single day. Competitions, consulting, and managing bars all came with their own pressures, but they also helped me grow.
Moving to the U.S. to expand my career brought new challenges—adapting to a different market, starting from scratch in some ways, and balancing my work in both Italy and America. On top of that, being away from my dogs for so long has been incredibly tough, and now, I’m working hard to bring them here.
But despite the struggles, every setback has been a lesson, and every challenge has made me better. Passion, resilience, and a love for this craft have kept me going, and today, I’m grateful for how far I’ve come and excited for what’s ahead.
Thanks – so what else should our readers know about Pablito the bARTender, luxury mixology?
Pablito the bARTender is more than just a cocktail catering company—it’s a celebration of Italian culture, hospitality, and the art of mixology.
We specialize in bringing the authentic Italian aperitivo experience to private events, weddings, corporate gatherings, and exclusive parties across the U.S., particularly in Los Angeles. Our goal is to share the Dolce Vita lifestyle, combining high-quality Italian ingredients, elegant presentation, and innovative cocktails that transport people to Italy with every sip.
What sets us apart? Passion, authenticity, and craftsmanship. We don’t just make drinks—we tell stories. Each cocktail is carefully crafted using premium ingredients, many sourced directly from Italy, and designed to create an unforgettable experience. We blend tradition with creativity, taking classic Italian flavors and elevating them with modern techniques.
One of the things I’m most proud of is how we’ve introduced people in the U.S. to a more refined and cultural approach to drinking. It’s not just about serving alcohol—it’s about creating moments, bringing people together, and showcasing the beauty of Italian mixology.
Beyond catering, I also consult for bars and restaurants, develop signature cocktail menus, and host masterclasses and training sessions for industry professionals and cocktail enthusiasts.
At the heart of everything we do is a deep love for this craft and a commitment to excellence. Whether it’s a private event or a high-profile gathering, we bring the same level of passion and attention to detail, ensuring every guest has an unforgettable experience.
If you love Italy, great cocktails, and the art of hospitality, Pablito the bARTender is for you!
We love surprises, fun facts and unexpected stories. Is there something you can share that might surprise us?
Most people who know me as a bartender, mixologist, and entrepreneur might be surprised to learn that I have a law degree from the University of Turin. Before fully dedicating myself to the world of mixology, I was on track for a legal career. But instead of pursuing a life in courtrooms, I chose to follow my passion behind the bar—where I could create, connect, and tell stories through cocktails.
Another surprising fact? I’m deeply passionate about history and storytelling. Every cocktail I create is more than just a drink—it’s a concept, a journey, and often a tribute to a place, a moment in time, or a cultural tradition. This is reflected in my latest menu, inspired by travel, where each drink represents a different part of the world.
And perhaps the most personal thing? My fiancée Ambra and I are currently on a mission to bring our two beloved dogs from Italy to the U.S. It’s been an emotional and challenging journey, but they are family, and we’re doing everything we can to reunite with them.
I think these things highlight who I am beyond the brand—a mixologist with a legal background, a storyteller through cocktails, and someone who puts heart and soul into everything I do.
