Meet Nathan Santillana of XRO Fresh Churro Bar

Today we’d like to introduce you to Nathan Santillana.

Hi Nathan, please kick things off for us with an introduction to yourself and your story.
I started a mobile business in 2017, providing fresh and authentic churros, at our local farmers market. . After spending many of my vacations traveling to Mexico, I could not find a place in Los Angeles that reminded me of the flavor of the Mexican churro.  I set out to perfect a recipe that would pay tribute to Mexico’s traditional churro flavor in every bite. Using the best ingredients, I proudly serve handcrafted churros, horchata, coffee & soft serve gelato infused with the flavors of Mexico.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I signed my lease in February 2020 not knowing that a pandemic was about to shut businesses down. What should have taken a couple of months to open turned into opening 1 1/2 years later. I was fortunate to have the support of my family and community to get through this time.

Alright, so let’s switch gears a bit and talk business. What should we know?
Our churros are prepared fresh with no additives, no preservatives, no dairy, no egg and no trans fat.  We also offer horchata which is prepared fresh daily with no syrups and no powders.  Our menu also includes organic coffee and teas.  In June 2021, I opened my first brick and mortar, XRO Fresh Churro Bar. XRO is pronounced “Sure Oh”, which is a play on the word churro.  Feel the vibe of my Hispanic heritage and trends of a modern Mexico, that my family loves and shares with pride and excitement in every option of the menu. Experience the atmosphere of a coffee shop in Mexico City, and listen to music that I grew up listening to with a playlist that has been put together for all ages to enjoy. It’s a place of nostalgia for many who visit us and for others, it is a new experience, XRO is the first churreria in the Santa Clarita Valley since 2017.

Let’s talk about our city – what do you love? What do you not love?
I was born and raised in Santa Clarita, this is my home, it is why I am committed to serve my community and make a positive impact… Growing up in Santa Clarita I have seen it grow from a small community, and although this has been an important economical growth for city, I do miss the small-town feeling.
