Today we’d like to introduce you to Maybed Romero.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
The intention behind the art has always been about providing communities with healthier food options and the use of herbal ingredients and the power these herbs and flowers can hold. Initially, Mar y Luna began as a different idea, it began as raw living desserts and plant-based meal services: “La Comida Es Medicina”, meaning that the foods we consume also have the potential to be our medicine. While the food I create has the intention to be medicinal, it is also crafted in a way that is meant to be delicately flavorful with a unique taste.
After a few years of learning the art of cooking, my interest for baking grew each day. One night, I dreamt that I was baking, the following day, I became the student. Eventually, ‘La Comida Es Medicina’ evolved into what is now ‘Mar y Luna’, the name that was always intended for the art. Mar y Luna then focused on creating herbal and floral-infused pastries, desserts and cakes. All plant-based, seasonal and always organic.
Since food & desserts have the ability to send peoples taste buds to bliss, why not craft something that is health-conscious and presented in the form of art? That is why Mar y Luna was created. With the use of herbs and flowers, we are reminded that the Earth provides us with these elements as a form of medicine and beauty, which is why Mar y Luna honors these elements by infusing them in our food art. Each piece being one of a kind and made with love.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Thankfully, I’ve worked along amazing chefs who’ve had the patience to teach and guide me. Although at times the work put into this art form can be stressful, I’ve come to understand that every time I get in my element, I have to enter with a clear mind to be able to overcome any situation.
My experience as a chef in the food industry has taught me to toughen up while at the same time develop patience and positive discipline.
If there is ever any struggles, such as a ‘bakers block’, I allow myself to take a break and gather mind to move forward and start again.
Mar y Luna (Botanical Bakery) – what should we know? What do you do best? What sets you apart from the competition?
Mar y Luna is a botanical infused, plant-based bakery that specializes in creating one-of-a-kind, special occasion cakes and desserts inspired by the seasons, lunar, solar and cosmic cycles. Although we create an array of desserts, pastries and jams, Mar y Luna focuses especially on floral cake pieces. As a chef, I believe that one of the things I am most proud of is the connections we have made with our dear clients and the joy it is to see them enjoy and appreciate our cakes and pastries! Another thing I am proud of is the friendships made along the way with other food artists who share the same love and passion for their creations which can be exciting and inspirational! I’d like to think that some of the things that makes Mar y Luna unique amongst other food artists is the use of herbal, floral and seasonal ingredients to create an edible work of art that is specially made for the person it is intended for and of course, always intended to be health conscious by using specialty flours and sweeteners.
What moment in your career do you look back most fondly on?
After working in different kitchens for years and making my way up, I finally found the confidence in my skills and vision to pursue and give life to all the ideas I thought about while I worked the line. The proudest moment in my career so far has been being able to create and form my own ideas and sharing them with our communities. It is a humbling feeling to know that my cakes and pastries are a part of someone’s special occasion.
