Meet Lynn Griffith of Katie’s Bakery in Pasadena

Today we’d like to introduce you to Lynn Griffith.

Thanks for sharing your story with us Lynn. So, let’s start at the beginning and we can move on from there.
Twelve years ago, my daughter Katherine became gluten intolerant. I began to create recipes for her and eventually it turned into a full-fledged baking line. I decided to open a bakery named Katie’s. My nickname for my daughter.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
It was a very hard road. I signed up as a turnkey operation. The City of Pasadena required unexpected changes to the bakery after I signed my lease and it unfortunately delayed the opening by 8 months. The lost time and financial burden were excruciating.

Katie’s Bakery – what should we know? What do you guys do best? What sets you apart from the competition?
Katie’s Bakery is a dedicated gluten free bakery. We have something for everyone….dairy free, vegan, grain free.

We offer a line of baked goods that have a rich, delicate taste, and a light and delicate texture. Not your everyday gluten free. We are a take-out organic and non-GMO establishment.

We understand the diversity of dietary needs and our main goal is to operate with utmost integrity. This way we can proudly support the celiac community.

We use no additives or preservatives and therefore our products have a 24 hour shelf life. Our product line is frozen at the top of baking so you can come in and pick out your baked goods of choice and place them in your freezer and then refresh them in your oven.

Our mission is to serve discerning customers for whom quality is a priority.

What is “success” or “successful” for you?
Doing something that I love and sharing that with other people. Getting up everyday and being excited to go to work is the key. Doing it with the utmost integrity is vital.
