

Today we’d like to introduce you to Jered Standing.
Jered, please share your story with us. How did you get to where you are today?
Background in both retail and restaurant butchery. Really immersed myself seven days a week for years to learn everything I could. Opened a shop/restaurant in LA for a different company, which gave me the experience needed to open my own shop about a year and a half ago. The shop focuses on animal welfare first, no waste, and unique items you can’t get anywhere else.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
There’s no such thing as a “smooth road”. There are always struggles. Everything costs more money and takes way longer than you expect when starting a new business. I don’t see obstacles as impediments to the way, they become the way. (I’m loosely quoting Marcus Aurelius.) A current and ongoing struggle is sourcing great meat in Los Angeles. It’s a problem of geography. We’re just not near a lot of farms. This business would be easier (and prices would be lower) in a more rural area.
Please tell us about Standing’s Butchery.
We sell grass fed beef and lamb, heritage breed pork, pasture raised chicken and duck. All from here in California. We’re very proud of our ability to use every part of the animal that comes in. We make a wide and ever-changing variety of sausages in-house, with unique flavors you won’t find anywhere else. (Check our Instagram for examples.) And no one can come close to our level of service. Actually, service is the wrong word. We’re hospitality business that happens to sell meat. We have conversations with people, not transactions. We connect with our guests on a deeper level than just “customers”.
If you had to go back in time and start over, would you have done anything differently?
Just raise a lot more money. Kidding! I wouldn’t change anything. Sure, there were some rough patches, a lot of stress, and SO MANY mistakes, but those are inevitable and make you stronger, smarter. That’s how we grow as individuals and/or businesses.
