Meet David Dennis of Matador Cantina

Today we’d like to introduce you to David Dennis.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I am the founding chef at Matador Cantina. Owner Mario Marovic gave me a shot to create the opening menu and lead the kitchen. That was 2009. Now, I am the executive chef, as well as the general manager responsible for both front and back of house daily operations.

The cuisine is a fusion of native and contemporary Mexican favorites with a hint of other south American flavors. Traditional items such as enchiladas are topped with house-made mole and sauces made from robust peppers and seasonal ingredients while unique dishes such as Chorizo Ravioli is made with chorizo-stuffed raviolis, served with a cilantro cream sauce.

Living in Mexico afforded me the pleasure and incredible firsthand experience of authentic Mexican cooking at its best, What I now apply to my own recipes was initially developed from generations of cooking methods straight out of a Mexican kitchen.

We like to let our food and guest service speak for itself and we’re honored for being voted Best Mexican Restaurant in Orange County back-to-back two years in a row by Golden Foodie Awards, among numerous other awards and acknowledgements.

The Matador Cantina is located at 111 North Harbor Blvd, Fullerton, CA. Lunch is served daily from 11am and dinner from 4:30pm. Brunch is served from 9am Saturday and Sunday. Happy Hour from 2pm-6pm Monday-Friday. Reservations and large group information at 714.871.8226

Has it been a smooth road?
Maintaining a great team is always a priority. Everything we do related to our success is attributed to our awesome team, which enables us to continually offer consistency throughout our food and drink menus, as well as the best customer care around. The challenge is always to keep it that way.

We’d love to hear more about your business.
We’re a Mexican restaurant and cantina, but beyond that, we are a community gathering spot where everyone is a friend and treated that way. I spend a great amount of my time on the floor greeting guests and making them feel right at home. Building quality relationships with our guests is what I believe sets us apart from larger chain restaurants. We like to connect with our guests and make sure their experience is even better than the last.

Is our city a good place to do what you do?
Orange County is a great place to live. It offers the best of everything from historic cities and towns such as Fullerton to a wide variety of cuisines and dining choices. I can’t think of a better place to be.
