Meet Ari Ebneyousef of Pizza 900 Wood Fired Pizzeria in Orange County

Today we’d like to introduce you to Ari Ebneyousef.

Thanks for sharing your story with us Ari. So, let’s start at the beginning and we can move on from there.
Established in 2011.

What started out as a mobile pizzeria catering small events has become a modern, newly designed, Italian brick-and-mortar pizzeria. Already tens of thousands of pies have been served out of our fully wood-fired ovens (Vicenzo and Lucia), creating thousands of smiles and satisfied guests. Pizza 900 is an authentic Neapolitan wood-fired pizzeria that can cook its pies in under 90 seconds. Our oven temperature gets to over 900 degrees which can enable us to cook our pizzas in less than two minutes.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
No idea can turn into reality without some bumps and bruises. When we first started, the idea of a mobile wood fired oven coming to you and preparing mouthwatering pizzas was not normal. People could not imagine that we can cook onsite. The first year was tough. I was working my event company business 6-7 days a week full time and then I would use my friend’s bakery or restaurant at night to go and prep my ingredients and get ready for the catering events that were upcoming. But shortly after the 1st year, the word got out that our pizzas are amazing and people started booking us months in advance.

Please tell us about Pizza 900 Wood Fired Pizzeria.
Our Business Model consists of casual sit down dining at our storefront. We also specialize in onsite and off-site catering. We work with individuals and corporations to create a unique culinary experience and now provide a large variety of different styles of food. Our company was established on the foundation of providing high-quality ingredients freshly prepared and served fast. We import our base ingredients from Italy. We source our produce locally. We make our own fresh mozzarella in house daily. We do not use sugar, butter or oil in our dough or red sauce. We have no freezers or microwaves so everything is freshly prepped for your enjoyment daily. We roast our meats and veggies in house daily. Our salad dressings are prepared in house.

If you had to go back in time and start over, would you have done anything differently?
If I were to start over again, I would have more control over the financial aspects of the business. It is very difficult to trust people with your money. My goal has and will always be to provide a great experience to our guests, however, creating a proper business money management system would have been really helpful.
