

Today we’d like to introduce you to Kate Greenberg & Mo Faulk
Hi Kate & Mo, we’d love for you to start by introducing yourself.
Kate: When I moved to LA from NYC a few years before we opened, I had been feeling a strong need to open a space that I felt I wanted to see in the city. I wanted to open a bar that reminded me of the nightlife I experienced in NYC; I wanted a place that felt intimate and a place that people can go to feel good, to dance, be with friends, and be in a queer space that celebrated nightlife, music, and the talented DJs that are in this city. I was introduced to Mo through a friend and immediately felt like we had an easy connection and were so aligned on vision, and it felt like the right time to take this step.
Mo: I am from LA and grew up playing basketball in college and professionally. Coming up in such a queer culture, I have gotten to see the lack of spaces in this beautiful city. I have always been really interested in creating community for people and giving them a space to be unapologetically themselves. When I was introduced to Kate, we immediately vibed and had the exact same vision.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
Kate: I’ve learned a lot along this road. At the beginning, I think we tested out a lot of programming and, over time, have gotten to a more refined place and consistency of experience that I’m excited to build on. We added a soft pretzel that no one was excited about but we it felt so we took that away, we decided to keep our hours to 3 days a week instead of consistently 4 days, and only open a fourth if we had the right event for it. It’s exciting that we have the chance to always be introducing new hosts, themes, DJs, etc., and every week, there’s a learning lesson as to what worked and what could be done differently.
Mo: I have learned so much over this past year. We tried some things that worked, and we tried some stuff that flopped a little, but it’s been such a fun learning experience. No struggles, but the beginning was about figuring out what our audience really enjoyed. Kate and I like to say we are in phase 2 now and things are really starting to flow. We have gotten the opportunity to work with so many incredible DJs and musicians. Shout out to our resident DJ Deesco!
Appreciate you sharing that. What should we know about Honey’s?
Honey’s is known for a place to dance. We are a queer bar that has a cute cocktail bar vibe from 8 pm, and then after 10 pm, we get busier and louder, and the dance floor fills up fast. I think what I’m most excited about from a brand perspective is that I want people to know they will always have a good time at Honey’s and that that feeling can translate as we do pop-ups in other places. We are doing a daytime event at Cubby Hole in NYC in June; we are planning a pop-up in Mexico later this year and at pool rooftop downtown. I think we set out to create an experience around music, and we are lucky to operate at Star Love and continue to grow from here. We are always looking to collaborate with other artists, DJs, promoters, and brands who are the right fit and share in our creative vision. It’s been nice to feel like the nightlife and bar space has felt like a supportive community, and we’ve made a lot of great relationships along the way.
