Hi Anmoldeep, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
The journey kicks off with my dad, Paramjit Singh, making a move to Frankfurt, Germany. Starting from the ground up, he took on the roles of dishwasher and prep cook at an Italian bistro. As fate would have it, he later teamed up with his brothers in the bustling kitchen of Bombay Cafe on Santa Monica Blvd in L.A., a standout restaurant during the ’90s. His unwavering commitment paved the way for him to rise to the esteemed position of head chef.
Fast forward to 1996, and my dad took the entrepreneurial plunge by opening All India Cafe in Pasadena and West L.A., setting the stage for our family’s culinary ventures. The pinnacle came in 2004 with the launch of the iconic Electric Karma. However, adversity struck in 2020 when All India Cafe’s West LA location had to close its doors, presenting us with unexpected challenges. Yet, our family remained persistent and innovative.
In 2021, my dad and I embarked on a new culinary chapter, establishing Roots Indian Bistro on the vibrant Melrose Avenue. Here, we aimed to combine the essence of traditional Punjabi dishes with a global flair, crafting a unique culinary experience that pays homage to our roots while embracing change.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The closure of All India Cafe’s West LA location in 2020 was definitely a roadblock for us. The pandemic hit us hard and caused a profound disruption to the legacy we had painstakingly built over the years. Navigating the uncertainties of the pandemic and adapting to the unprecedented circumstances was hard, but there were silver linings.
Driven more than ever by our passion and culinary vision, my dad and I embarked on a quest for a new concept. In 2021, we decided to open Roots Indian Bistro on Melrose Ave. Every hiccup, every curveball, just made us even more determined and brought out the best in us. It was like turning stumbling blocks into stepping stones. Each obstacle turned into a chance to get better, refine our game, and stick to what makes Roots special – a unique, authentic dining experience.
Roots Indian Bistro wasn’t just born; it rose from the chaos of uncertainty. It’s a testament to our ability to roll with the punches, adapt like champs, and come out even stronger. Going from the closure of our West LA spot to the buzz of Roots was a game-changer, proving that we’re not just about determination but also about bouncing back when life throws a curveball. It’s a part of our story that makes Roots Indian Bistro more than a place to eat – it’s a resilient, ever-evolving culinary legacy that’s all about the good stuff.

Roots Indian Bistro isn’t your typical dining spot; it’s an immersive cultural experience that goes beyond the confines of a restaurant. Since our inception in 2021, we’ve been on a mission to create a culinary haven that serves as a bridge reflecting the immigrant experience. Our fusion of traditional Punjabi dishes with global influences has struck a chord, building a robust fanbase and earning us a near 5-star rating across various platforms. At Roots, we’re not just serving meals; we’re crafting an encounter that marries heritage with innovation, offering patrons an unforgettable gastronomic journey.
Our menu is a testament to this commitment. We’re not satisfied with the ordinary; we’re pushing the boundaries of traditional Indian cuisine. Instead, we saw it as a golden opportunity to redefine and reimagine.
