Hidden Gems: Meet Alex Vargas of El Cocinero Restaurant

Today we’d like to introduce you to Alex Vargas.

Hi Alex, we’d love for you to start by introducing yourself.
I was always passionate about cooking and when I became vegan sevens years ago due to the realization of the compassion of animals, I went on this journey of self discover which helped me create El Cocinero Restaurant. I saw that there was a lack of vegan restaurants here in The Valley, so I set myself up for the job to create the first vegan Mexican restaurant in The Valley. I was born in Jalisco, Mexico and now we are closer to my community because of my menu consisting of mainly authentic Mexican home recipes but without the process of any animal cruelty. With our restaurant, we not only have variety of great authentic Mexican dishes, but we have made them by helping our community by having the same great taste but without causing someone to have high blood sugar, high cholesterol, cancer, diabetes and many other diseases caused by consuming animals products. Our mission is to prove to our community that they can still enjoy all the traditional Mexican dishes without harming the lives of animals.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Opening a restaurant in the middle of the pandemic was not easy but we had fate in ourselves and my passion for cooking and serving my community helped drive me to have a vegan Mexican restaurant that anyone can enjoy. In every corner, you see a fast-food restaurant or a liquor store that does not cater to those with special dietary restrictions. We made it our goal to have a vegan Mexican restaurant that will help those in our community with those dietary restrictions and a love for vegan Mexican food without any animal cruelty.

We’ve been impressed with El Cocinero Restaurant, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
El Cocinero Restaurant offers authentic Mexican vegan food that is made 100% cruelty-free. We want to push the stereotype that only certain people can enjoy vegan food out because anyone can enjoy vegan Mexican food even if it is not made from animals. Our recipes are catered to taste and not to what it is made from as I have created a menu that resembles that of Mexican Food but without the means to hurt any animal.
