Luke & Kyle, we appreciate you taking the time to share your story with us today. Where does your story begin?
Windsor Hills Pizza was founded by brothers Luke and Kyle, who grew up as the oldest of seven siblings in a close-knit, entrepreneurial family. Homeschooled by parents who emphasized both practical skills and hospitality, the brothers learned early on that food is more than sustenance—it’s a way to bring people together and create lasting memories. Inspired by their Christian faith, their mission is clear: “To glorify God by creating community and bringing families closer together.” This guiding principle shapes every decision they make, from where they serve pizza to how they interact with their customers.
Rather than following the typical pizza truck route of popping up at bars, Luke and Kyle made a deliberate choice to focus on parks and family-friendly spaces. They wanted Windsor Hills Pizza to be a place where families could gather, picnic, and connect. Their greatest joy comes from seeing groups of families enjoying a meal together in the park, fostering the kind of community they believe is foundational to a strong society.
To deepen these connections, they launched “Family Nights”—special events at local Culver City parks featuring live music, crafts, and activities designed to engage both kids and adults. These gatherings have become a signature of Windsor Hills Pizza, drawing crowds who come for more than just the food—they come for the experience and the sense of belonging.
Windsor Hills Pizza is known for its New York-style sourdough pizza, a recipe with roots that stretch across the Atlantic. Kyle, the culinary force behind the pies, trained under Michelin-starred chef Brendan Collins and later honed his skills at a bakery in France. There, he was entrusted with a 60-year-old sourdough starter, which he brought back home and now uses as the foundation for every crust. This starter imparts a unique flavor and texture that sets their pizza apart.
Kyle’s culinary creativity shines through in the weekly rotating specials, which have included inventive pies like the Street Fighter (Angus chuck barbacoa, chipotles, mozzarella, au jus, onions, cilantro, and lime) and the Ratatouille (bell peppers, zucchini, and summer squash tossed in olive oil and oregano).
Luke, meanwhile, brings his expertise in restaurant management and hospitality to the business. His restaurant experience goes back to when he was just 10 years old starting his first food business “Snoboat”. After saving up for two years mowing neighbors lawns he invested in a snow cone machine. Luke sold his Hawaiian shave ice at soccer tournaments, lacrosse tournaments and catered for birthday parties. As he reached the end of high school he wanted to learn more, so he went to work at one of the most successful hospitality centered restaurants; Chick-fil-a. He quickly grew there and soon managed their 7 million dollar drive thru leading the team to break records in speed of service and sales. He now uses what he learned at Chick-fil-a to inspire the Windsor Hills Pizza team. His focus on team member growth and customer experience ensures that every Windsor Hills Pizza event feels warm, inviting, and memorable.
Launched in March 2022 with a single oven on a modest trailer, Windsor Hills Pizza has grown rapidly, now operating 3 custom pizza trailers and serving thousands at community events. As they have grown, Luke and Kyle remain true to their mission—using pizza as a way to build community, create joy, and bring families closer together, one slice at a time.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Windsor Hills Pizza’s journey began with immediate adversity. After investing in a used pizza oven from a restaurant equipment store, they paid extra to have it converted for propane use. However, upon bringing it home, they discovered the conversion was botched—the oven couldn’t get hotter than 400 degrees, far below the temperatures required for quality pizza. The seller disappeared, leaving them stranded just days before their first event. Luke, faced with a looming deadline and unable to find a technician willing to work on the hazardous propane oven, took matters into his own hands. Despite having little technical skill, he turned to prayer and then found a YouTube tutorial that provided just the breakthrough he needed. Miraculously, he managed to fix the oven himself, getting it up to the necessary high temperatures just in time for their debut event.
Their first event brought new lessons. Initially, they used post-it notes to track orders, only to watch them blow away in the wind—an obvious flaw for an outdoor mobile kitchen. Upgrading to paper tickets on a bar helped, but soon proved confusing for the kitchen staff. As a small business, implementing a robust solution was not straightforward. Over time, they invested in a point-of-sale (POS) system with kitchen display tablets and online ordering, which finally streamlined their order management and improved efficiency.
The physical setup of Windsor Hills Pizza was another source of difficulty. Their first trailer was a makeshift assembly: a small utility trailer with a backyard canopy bolted down, a folding table with cutouts for ingredients, and their single-deck oven. As demand grew, they hired a welder to custom-build a new trailer. The result was excellent, but when they returned the following year for another build, the welder’s price had skyrocketed—seven times higher than before. Forced to adapt, Kyle and Luke, with their fathers’ help, designed their next trailer using SolidWorks, a 3D CAD program. They sourced materials themselves and directed a hired welder through the build, finishing in a single weekend. This hands-on experience, though exhausting, gave them valuable skills and the confidence to realize their vision for future builds.
Like many small business owners, Windsor Hills Pizza has faced a steady stream of setbacks. Their catalytic converter and kitchen display monitors have been stolen, their truck has been broken into with the window smashed and contents taken, and their ovens have broken down at events. Each incident has tested their resilience and forced them to adapt quickly.
Despite these challenges, Windsor Hills Pizza has persevered, driven by a mission to create community and bring families together through food. Their story is one of resourcefulness, grit, and faith—qualities that have transformed obstacles into opportunities for learning and growth. The brothers’ entrepreneurial spirit, instilled by their family, continues to guide them as they navigate the unpredictable world of mobile food service.

We are focusing on creating vibrant community connections through awesome events such as our “family night” events. These themed gatherings provide fun opportunities for families and friends to come together, fostering a strong sense of belonging and enjoyment within the community. Additionally, we plan to deepen our community involvement by supporting local schools in their fundraising efforts, helping to strengthen educational resources and community ties.
In the longer term picture, we would like to continue to grow our team and empower youth with the knowledge and opportunities to make an impact in our business and maybe even their own.
