

Today we’d like to introduce you to Arthur White.
Hi Arthur, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I was first introduced to sourdough pizza in late 2018 when Rosehill Sourdough come to pop up at a coffee shop that I happened to be working at. They would come every week and set up and serve pizza to everyone. The owner needed help one day making the pizzas and asked me if I was interested and I gladly accepted. For a couple of weeks, he taught me about sourdough bread and sourdough pizza. It wasn’t long after that when I started to fall in love with the process of sourdough. The owner of Rosehill ended up getting a job in Scotland with a popular pizza oven company and it left me hungry and wanting to make more pizza. After he was gone, I got my own small pizza oven and started to make my own. I then started inviting friends and changing my recipes to adapt my style a bit more. Eventually, I started my own pop-up with the help of two close friends, Clayton and Weston.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
One of the biggest struggles that we faced in Canvas was for about six months, I was living in Apple Valley but still working in Riverside at night as a bartender. Doing this on top of Canvas was getting to be very exhausting and every week, I was getting off work late nights and early mornings and immediately making dough until the sun would come up the next day. There were some pop-up events that I didn’t sleep for three days with only an hour nap to keep me going. During these times, we were also making our dough with a small kitchen aid mixer, only making five dough balls at a time when our events needed 100. I would usually get off work at around 1am and start making dough at about 1:30am and if I was making 100, I was finished around 8am. But once the dough was done is when I would then make and shop for the other ingrediants for our events. So it became a very tiring and long process for every event.
As you know, we’re big fans of Canvas Pizza. For our readers who might not be as familiar what can you tell them about the brand?
We are a sourdough pizza pop-up and caterer specializing in hand-making all our pizzas from scratch and cooking them in front of you. I started Canvas to bring delicious, unique sourdough pizzas to the Riverside area. We are always experimenting with different toppings and flavor combinations to give our customers a new experience every time they come out to support us. We truly feel our delicious dough is what helps keep us separated from other pizza shops.
