Today we’d like to introduce you to Logan Jones.
Hi Logan, thanks for joining us today. We’d love for you to start by introducing yourself.
I fell in love with middle eastern food while living in Los Angeles. I would eat at the restaurants as often as I could and then started incorporating middle eastern spices and flavors into my cooking. I then had the opportunity to work on the opening sous chef team of Bavel in the arts district of downtown LA. Chef Ori really taught me all of the skills and techniques of middle eastern cooking. I then moved to Santa Barbara and became the CDC of the Lark. This is where I was able to design and execute a middle eastern inspired menu under the guidance of chef Jason Paluska. After leaving the Lark I decided to pursue my dream of opening a shawarma restaurant and started a pop up at Third Window Brewery. I was able to workshop my concept and eventually move into the space that I have now in The Funk Zone of Santa Barbara.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Nothing is smooth when it comes to starting a business, let alone a restaurant. I would say that the hardest part was and still is saving time for my family and for myself. It’s easy to work all day everyday, really…. it is, but the hardest part is organizing your team and business structure to allow yourself to have a “normal” work life balance.
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I would say that we have the most unique and personal take on shawarma in the entire central coast of California. I am most proud of the program that I have built, though I had some middle eastern experience in restaurants, I mostly taught myself how to do everything. We are different from others in that we offer a fresh unique take on classic middle eastern street food and cuisine.
What does success mean to you?
If I can pay my bills, my team, and myself and still have some leftover.
