Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
West of Orleans is the brainchild of our family. My wife Trissa and I run dad to day business with help from our sons Myles and Avery. We had sold a catering company and it did not work for the owners so we took back posession and rebranded, to a simple To Go Only and catering concept. Simplicity allows us to run a 4 day a week business and catering some during the week an on most weekends. We are fortunate to have quality of clientele as Los Angeles Rams, Porsche, Mercedes, Amgen as well as local business and families.

Quality, consistency, customer service and flavor is our key to success. Our menu is French Creole-Cajun, Jerk, Healthy Southern and Smoked Meats. We have been a 5 star concept on Yelp and Google for 5.5 years running. Our menu is like no other blending combinations of house made seasoning, sauces and stocks,

This is actually our 4th restaurant concept over a 27 year period.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Funding for small businesses has always been a challenge. Banks rarely fund small businesses and when they do it is very minimal. During the pandemic our concept was very successful since we have always been a To Go concept. We did lose thousands of dollars in catering and was not eligible for the free PPP money distributed to businesses.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
Trissa and I have been cooking all of our life, originally from the south it has been in our blood, As a chef, catering plays a big role as we are full-service caterers. Our presentation is just as important as service and quality, but combined, it is a win-win.
We are very proud that as a family we provide the best of the best, every time.

What has been the most important lesson you’ve learned along your journey?
Communication, patience and trusting one another. When I am not impatient Trissa slows me down, when she is unsure, I help her thru the process.
