Today we’d like to introduce you to Kevin Cho

Hi Kevin, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
After graduating from sushi school, and after working at different sushi restaurants building experience, I opened hoka hoka sushi & sake restaurant. And after running my first restaurant for 15 years, I’ve recently embarked on an exciting new journey with the opening of our second establishment, Hoka Hoka Express. This restaurant brings a fresh concept to the fast food scene, offering a delightful fusion of Japanese sushi with a quick-service twist. At Hoka Hoka Express, we serve a variety of dishes, including bowls, onigiri, tempura, ages, and handroll sets, ensuring there’s something for every palate. In addition to our main offerings, we also feature an assortment of sweets, snacks, and merchandise from across Asia, making Hoka Hoka Express not just a dining experience, but a cultural one as well.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Restaurant business is extremely difficult
Especially during covid. We went through countless changes.

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Event hough hoka hoka express is new, I have a long experience as a restaurant owner. Our staff is very strong. Most of them have 10+years experience. And I am heavily dedicated to my restaurants. We have great combos and we are known to have great, fast-paced service. I will continuously dedicate my time in my restaurant. Hard work never fails.

Where do you see things going in the next 5-10 years?
I’m not sure in 5-10 years but we are trying something new in the sushi industry. So we are continuously making Changes to our menu accordance with feed backs from our customers. Restaurants usually take 1-2 years to settle. So we still have an uphill battle left until we can see how end up.
