Today we’d like to introduce you to El Segundo’s Fleming’s Prime Steakhouse and Wine Bar.

We’d love to learn the story behind Fleming’s Prime Steakhouse and Wine Bar.
Founded in 1998 by restaurateurs Paul Fleming and Bill Allen, the first Fleming’s opened in Newport Beach, California. The vision was to create a unique steakhouse experience with an emphasis on generous hospitality, an inviting atmosphere and the very finest aged USDA Prime beef. Today, there are 67 restaurants nationwide and one international.

Operating Partner, Le Vo, described his journey in the restaurant industry:
I’ve always had an interest in business and knew I wanted to go into hospitality. At first, I didn’t plan to take the restaurant path, but after working in it, I fell in love. During college, I hosted and waited tables at various restaurants and that’s where I began to understand the flow of the business. Shortly after, I was approached by the Japanese restaurant I was working for and they asked me to join their management team. I worked in a number of their restaurants and opened a few before moving on. When I joined Fleming’s Prime Steakhouse & Wine Bar as one of their Operating Partners, it confirmed that this is business that I want to be in.

Successfully running a restaurant is extremely difficult. Tell us about some of the challenges you’ve had to overcome.
Operating Partner, Le Vo, described his biggest challenges:
The biggest challenge that I faced in my career was joining the restaurant business at such a young age. I was often told that I was too young to have the responsibilities required to run a restaurant and that I lacked the experience. At first, I never wanted to ask for help and felt like I needed to figure everything out on my own. It wasn’t until I started asking questions that everything started to happen for me and I began to grow my career in this industry.

Fleming’s also offers an award-winning wine program centered around the Fleming’s 100®, an approachable and diverse collection featuring 100 wines by the glass and hand-selected by its Director of Wine.

• Small Plates – Fleming’s Small Plates are reminiscent of a Mediterranean style of dining and dishes like the Sliced Filet Mignon with Shiitake Risotto blend Asian influences with European flavors. Others like the Lobster Tempura are a variation on a Fleming’s favorite. These smaller dishes represent a whole new way to dine at Fleming’s – to be enjoyed anytime with a glass of wine, shared with friends, or as a starting course to a meal. As with the majority of Fleming’s menu, they can be modified to be gluten free upon request.
• FIVE SIX SEVEN – Start your evening with Fleming’s “FIVE SIX SEVEN” bar menu, featuring five selections starting at $6 from 5-7 p.m. The menu offers premium cocktails, award-winning wines by the glass, signature appetizers and bar la carte selections.
• Bar Menu – Fleming’s continues to set the standard in steakhouse dining with its Bar la Carte Menu. Served exclusively in the bar, the menu offers Fleming’s Guests satisfying dishes available any time, any evening. More substantial than appetizers or the typical “bar bites” found at many restaurants, the addition of this Bar la Carte menu makes Fleming’s bar as much a destination for food as it is for wine and cocktails.
• Seasonal Menus – Fleming’s offers a variety of menus to fit every special event and season. From our specially curated summer pairings to our decedent holiday celebrations, there’s truly something new for everyone to try at your local Fleming’s.

Petite Filet Mignon

This 8 oz. steak is aged to perfection for flavor and texture. Fleming’s offers two preparation methods: steaks are either classically prepared with a kosher salt and pepper seasoning then broiled at 1,600 degrees or iron crusted and finished with butter and fresh parsley.

Housemade Burrata

Featuring charred grape tomatoes and wild arugula on a toasted garlic crostini, Fleming’s Housemade Burrata is always a top selling appetizer.
