Hi Aysenur, so excited to have you with us today. What can you tell us about your story?
    I started my Pastry  career in Turkey and decided to continue it internationally, particularly in the United States, after completing my education. Initially, I had no plans to become a Pastry Chef but my Executive Chef believed I would excel in this field, which motivated me to take my first steps. This decision led to adventures and experiences beyond anything I could have imagined.
My first professional experience in the United States began in Colorado, a place I came to call home. Later, I settled in Los Angeles, where I currently focus professionally on designing and crafting handmade bonbon chocolates.
Three years ago, I had a dream about making my first chocolate. At the time, I had no prior experience with the intricate techniques and delicate details involved in chocolate-making. However, in the dream, I vividly saw myself crafting my first chocolate. The next day, I recalled the dream and recreated it in my kitchen, successfully making my first chocolate. I believe chocolate chose me, and ever since, I’ve continued to hone my skills and gain experience in the art of chocolate-making without ever looking back.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
      Absolutely, it was without a doubt the best decision and path I have ever chosen in my life. If I were to live my life again, I would undoubtedly choose the same profession. Of course, this journey has not been without its challenges. There were countless sleepless nights and days spent working tirelessly. I devoted myself to continuous learning through books, recipes, videos, and hands-on experiences to improve my craft.
I often compare pastry and chocolate to a bottomless well or an ocean—there is no end to innovation. What truly matters is knowing what you want to create and understanding your craft. I even liken it to a relationship. No matter how solidly you establish your connection, a single mistake can disrupt everything, requiring you to start over and rebuild.
But above all, I can confidently say that the joy and fulfillment I get from this adventure make it all absolutely worth it.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
     I specialize in pastry, baking, and chocolate. In recent years, alongside my professional pastry career, I have been focusing on chocolate, exploring new and unique paths in this field.
What I believe sets me apart is the emotional depth I pour into my designs and the incredible sensations my recipes evoke through the interplay of our senses and the reactions they trigger in the brain. I always approach flavor and texture perception as a unified experience, ensuring that every creation is thoughtfully crafted to deliver a remarkable and unforgettable sensory journey.
What matters most to you? Why?
    Discipline, time and stress management, and cleanliness—these are, in my opinion, essential pillars for success. Without them, it’s nearly impossible to thrive in this field. Working in an incredibly demanding industry that often requires managing multiple productions simultaneously, mastering and effectively applying these fundamentals is absolutely crucial for me.
