Today we’d like to introduce you to Paris Rezaie.
Paris, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
I inherited my love of cooking and baking from my grandfather. Growing up in a big family in the 90’s and spending those long summer vacations in Damavand, a rural part of Tehran, Iran, we had the perfect childhood. It was fantastic to run to the woods and play all day until our parents summoned us to the dinner table where the entire family would sit together and eat the simplest and yet the freshest food possible. Thanks to my grandfather who was one of the most renowned bakers in town, we always had access to freshly baked bread all year around. Him baking and growing vegetables and fruits was integral to who we were and the way we lived.
My mother, on the other hand, was the second best baker around in our family. The aroma of freshly baked bread permeating from the oven, and any gloomy day would magically turn to a bright shiny one and THAT, was her power.
For me, baking started as a hobby. The more I baked, the more I realized how ingrained that desire is in me. It started penetrating in every corner of my thoughts while I was at school pursuing a degree in biochemistry. My fulfillment of being a baker has two sides; an individual act and its social experience.
Being in the kitchen and having that apron on, I see form, I see color, I create tastes and I see the technical aspects of composition, the ultimate form of satisfaction, meditation and this is what I cherish the most. And when it comes to the point where my product, “The Cake,” become the crown of people’s celebration, I become proud by witnessing that despite all of the differences, background and cultures people always come to the agreement of an exquisite taste.
Has it been a smooth road?
