Meet Paul Rosenbluh of Cindy’s Restaurant in Eagle Rock

Today we’d like to introduce you to Paul Rosenbluh.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
I’ve been in this industry for 30 years now, starting when I was 15 bussing tables. I traveled all over the country working my way through every kind of restaurant I could to learn everything I could. I love food and making my version of it. I recommend this industry to no one, but it is all I will ever do because I love it. This is the second restaurant that I have owned.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
No journey is ever smooth, if it is, your doing something wrong. You learn from adversity, making mistakes, this makes you better at what you do. There are always things you could have done better in hindsight, you just try not to do that same thing again next time that problem arises.

Cindy’s Restaurant – what should we know? What do you guys do best? What sets you apart from the competition?
Cindy’s is a 1940’s diner, it actually opened as Cindy’s in 1948, but has been producing food at this location since the early 30’s.

My version of it is more southern than most. We have a smoker in the kitchen where we cure and smoke all our own meats. It’s a scratch kitchen as well. Everything, except for bread, is made in-house, including all pastries. I do this because it’s the fun part, making it all ourselves, I love that process.

The restaurant industry is a hard business to succeed in. You cant make it without a solid staff that actually likes working for you. I pride myself on my staff. They are a wonderful group, front and back of the house. I created the structure of the business, they make it happen every day.

What is “success” or “successful” for you?
Success is defined by how happy you are doing what you’re doing. If I go in and like what I see, then that is a successful day. Paying my bills is pretty important as well I guess.
