Meet Rick Delarosa of Fitchow in Lancaster

Today we’d like to introduce you to Rick Delarosa.

Rick, please share your story with us. How did you get to where you are today?
I started in October of 2016 using the shoebox-sized kitchen of my existing restaurant. I had decided to open a restaurant (Cuban-style family restaurant) in 2013 and it was going well but I missed being involved in fitness. I had been in the fitness industry for over ten years before then and I had always been into fitness. So I decided to merge my two passions, food and fitness. So Fitchow was born. I started building the business from the ground up and filling orders out of my kitchen after-hours. I would work graveyard shift making meals almost every day of the week. This went on for about the first year until we reached about 2000 meals a month and we’re running out of space. Four years later, we are producing about 10,000 meals per month out of our dedicated 4000 square foot commercial kitchen and have grown to a total of 10 employees. We are still small but hope to expand our services nationwide in 2021.

Our passion is to make healthy eating easy, affordable, and Enjoyable! With an emphasis on enjoyable. We believe in balanced, healthy eating and prepare everything in our meals from scratch.

Currently, the meals are made and delivered once or twice weekly to our customers via our delivery vans.

Has it been a smooth road?
We have always continued to grow year after year, and for that I am very grateful. However, I can’t say it has been a smooth road. In the first three years, we worked countless graveyard shifts up too 16hrs long. Moved through 3 different kitchens and developed a rotating menu of over 100 meals.

So let’s switch gears a bit and go into the Fitchow story. Tell us more about the business.
We care first and foremost about adding value to the lives we touch. Our mission is to make healthy eating more realistic for people. That means that in a realistic world it’s hard to stick to a strict diet and it’s also hard to prepare healthy food for yourself on a regular basis. This leads people to choose bad food for the sake of convenience. What we strive to do is to make our meals healthy, affordable, and delicious! Our recipes have been developed by us from scratch so you’re not going to get what we do anywhere else. And we have made healthy eating fun with these unique and delicious recipes.

How do you think the industry will change over the next decade?
I believe the industry will continue to grow as people get busier and as options/time to eat out become more limited. It only makes sense to save time by avoiding the shopping, cooking, and cleaning while still eating healthy.
