Today we’d like to introduce you to Dorian Southall. 

Hi Dorian, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today.
I started by watching my mom cook, which became an early passion for cooking. Once I realized that I could turn my passion into a career after my time in the Marines, I was thrilled. With close to 25 years of experience in the culinary world, opening two restaurants and three hotels, a lot of ups and downs, and a “little” push from the corporate world, I decided that with all of the knowledge that I had, it was time to start my own business. And who starts their business at the beginning of a worldwide pandemic? Me, of course, lol. 

We all face challenges, but looking back, would you describe it as a relatively smooth road?
It hasn’t been a smooth road—many bumps and bruises, ups and downs. Struggling to find consistent customers, doing all the marketing on my own, and dealing with city guidelines are always a hassle. But it’s all a learning process, and I am truly learning a lot. 

Appreciate you sharing that. What else should we know about what you do?
I am the owner of Scratch Test Kitchen, a private chef and catering service, test kitchen, pop-up events, and consulting company all rolled into one. The goal of Scratch Test Kitchen is to change the culinary landscape and bring fun back into cooking, something I believe has been missing for some time. Although all ingredients in my dishes can be identified by guests, they still possess a “WOW” factor, something that has been recognized by multiple magazines. My no-nonsense approach focuses on products that are of high quality and in season, which allows the natural flavors to come through in his cooking. What sets me apart from others is that I strive to make sure my guest doesn’t feel like their event is just transactional. “Sharing connections beyond the plate” is my business motto. I take the time to get to know my guest, and it’s more than small talk. 

We all have a different way of looking at and defining success. How do you define success?
That’s a tricky question, open to interpretation. I define success as waking up in the morning and striving to keep my business running, growing, and evolving. Everything else will fall into place.
