Hi Eve, we’d love for you to start by introducing yourself.
Hi, there my name is Eve, The Plant Lab founder. I own a Thai vegan restaurant in Hawthorne, Vegan Nova and after 3 years in the restaurant industry, I realized that in our vegan community we can find Thai, American, Chinese, and other vegan food easily but Japanese. Then I make it happen in January 2022. The Plant Lab was first started from a food truck and then expanded to the brick-and-mortar in Hollywood in March 2022.
We all face challenges, but looking back would you describe it as a relatively smooth road?
The Plant Lab first started on a food truck. I have experience in how to operate a restaurant but the food truck business is different. Recipe, ingredients, ts, and flavors are not my problems but the pandemic, healthier and others affected my food truck business a lot when I was started. The pandemic makes events limited and cancel a lot.
The weather forced us to stop running our food truck wheels when it was raining. The other challenge is something like how can I introduce my food to the people because it is a kind of NEW at that time, how the people will know who is and how can I keep the people coming back to us finally I can prove everything. The Plant Lab’s food is not only for Vegan but everyone.
I have a lot of customers who was not vegan but love my food a lot. Our food truck traveled around LA and we received both positive feedback and a warm welcome. It can be guaranteed by the Best Food Trucks award in 2021 from Vegnews.

The Plant Lab is a Vegan Japanese Food truck and restaurant. Our food truck is travel around LA and always joined the Vegan Events every week. Our brick-and-mortar location is 5420 Hollywood Blvd LA CA 90027. We served Non-GMO, organic vegan Japanese food not only sushi but also Ramen, Rice bowls, and Appetizers.
We may not be the first ones who served Vegan Sushi and other Japanese dishes but right now we can say that we are the ones who make the rules. Our food does not only for Vegans but everyone because we believe that we can cook the best quality and tasty food without harming any animal life.
What matters most to you?
The Plant Lab most matters about quality, flavor, and creativity. We are not served traditional food but we served creative one. Moreover, The other matter is our team. The strongest team makes everything the best.
